Description

This creamy pasta with potatoes and sausage is a perfect comfort food for cooler days. The sweetness of the potatoes goes perfectly with the strong flavor of the sausage, creating a rich and satisfying dish. I often prepare it when I need something quick but tasty, and I must say it is always a success! The hazelnut crumble adds a crunchy touch that makes it even more special. Ideal for a family lunch or a dinner with friends, this pasta is a true embrace of flavors. Try it, you won't regret it!

Ingredients (9 ingredients)

  • 320 g half sleeves pasta
  • 300 g potatoes
  • 0.5 piece onions
  • 200 g sausages
  • 100 ml white wine
  • extra virgin olive oil
  • fine salt
  • 40 g chopped hazelnuts
  • parsley

Preparation (9 steps)

Potatoes in pieces

Peel the potatoes and cut them into small pieces. Put the potatoes in the Mixtopf and add water until they are covered. Add a pinch of salt.

Pureed potatoes

Drain the potatoes, reserving 1 ladle of cooking water. Put the potatoes back in the Mixtopf with the reserved cooking water.

Sautéed onion

3 min/248°F/Speed 1 120

Chop the onion in the Mixtopf: ½ onion in pieces and chop for 3 Sec./Stufe 5. Add extra virgin olive oil and sauté for 3 Min./120°C/Stufe 1.

Browned sausage

Remove the sautéed mixture from the Mixtopf and set aside. Break up the sausage (200 g) and brown it in a pan with a drizzle of oil until it changes color.

Deglaze with wine

Deglaze the sausage with 100 ml of white wine and let the alcohol evaporate.

Potato and sausage cream

3 min/194°F/Speed 1 90 Reverse

Pour the potato cream into the Mixtopf with the sautéed mixture and sausage. Mix to flavor well with the sausage. If necessary, adjust the salt.

Season the pasta

2 min/194°F/Linkslauf Speed 1 90 Reverse

Cook the pasta (320 g half sleeves pasta) in boiling salted water. Drain it and pour it into the Mixtopf with the sauce. Mix to season it, using a ladle of cooking water.

Chopped hazelnuts

Chop the hazelnuts (40 g) in the Mixtopf: 3 Sec./Stufe 5.

Garnish and serve

Garnish the pasta with the hazelnut crumble and chopped parsley. Serve hot.
