Description

This Thermomix® recipe for pasta with pumpkin and sage is a vegetarian main course with Hokkaido pumpkin, leek, and fresh sage. Ingredients (13 ingredients)

  • 0.5 Stück small Hokkaido pumpkin
  • 0.5 Stück thin leek stalk
  • 8 Stück fresh sage leaves
  • 0.5 Stück organic lemon
  • 2 EL olive oil
  • 1 EL butter
  • 150 g short pasta
  • 100 g cream
  • 450 ml strong vegetable broth
  • nach Geschmack salt
  • nach Geschmack pepper
  • nach Geschmack Piment d'Espelette
  • 30 g Parmesan

Preparation (10 steps)

Prepare the pumpkin

Wash half the pumpkin, remove seeds and fibrous flesh. Cut off any unsightly areas of the skin and cut the pumpkin into approximately 1 cm cubes. Set aside.

Prepare the leek and sage

Halve the leek, wash thoroughly and cut into thin slices across. Rub the sage leaves dry with kitchen paper. Chop 1 sage leaf. Set aside.

Prepare the lemon

Wash the half lemon in hot water and dry, finely grate the zest, squeeze the juice. Set aside.

Fry the sage

Put the oil together with the butter in the mixing bowl and heat. Add the whole sage leaves and fry briefly. Remove with a spoon and drain on kitchen paper.

Sauté the pumpkin and leek

Add the pumpkin cubes and leek to the mixing bowl and sauté.

Add pasta, cream and broth

Add the pasta, cream and vegetable broth to the mixing bowl.

Bring everything to a boil and simmer.

Season with salt, pepper, Piment d'Espelette and 1 tsp of grated lemon zest and the chopped sage.

Grate Parmesan (optional)

Add the Parmesan (if using) to the mixing bowl and grate.

Season and Serve

Season the dish to taste with lemon juice, salt and pepper and serve sprinkled with sage and Parmesan as desired.
