Description

This yeast cake with fresh seasonal fruit is an absolute classic and tastes simply heavenly! I especially like to make it in summer when there is a large selection of delicious fruits. Whether apples, plums, rhubarb or cherries - everything goes wonderfully on this juicy cake. The dough is super easy to prepare in the Thermomix® and rises nicely. Perfect for a cozy Sunday brunch or as a sweet surprise for a birthday. A piece of summer on your plate!

Ingredients (8 ingredients)

  • 200 ml Milk
  • 75 g Butter
  • 75 g Sugar
  • 0.5 cube Yeast
  • 400 g Wheat flour Type 405
  • 1 Prise(n) Salt
  • 1 piece Egg (room temperature)
  • 1 kg Seasonal fruit (e.g. apple, plums, rhubarb, cherries)

Preparation (7 steps)

Heat milk and butter

Put 200 ml milk and 75 g butter into the mixing bowl and heat for 2 min./37°C/speed 2.

Dissolve yeast and sugar

Thermomix® Setting
20 sec/Speed 3

Add 75 g sugar and 0.5 cube of yeast and stir for 20 sec./speed 3.

Prepare pre-dough

Thermomix® Setting
10 sec/Speed 3

Add some of the 400 g wheat flour Type 405 and stir for 10 sec./speed 3. Cover the mixing bowl and let it rise in a warm place for 10 minutes.

Knead yeast dough

Thermomix® Setting
2 min/Kneading speed

Add the remaining flour, 1 pinch of salt and 1 egg (room temperature) and knead for 2 min./kneading setting to form a smooth dough. Cover the mixing bowl and let it rise in a warm place for 60 minutes.

Prepare fruit

While the dough is rising, wash, clean and, if necessary, cut 1 kg of seasonal fruit into small pieces.

Roll out and top the dough

Preheat the oven to 180 °C top/bottom heat. Briefly knead the dough on a floured work surface and roll it out on a baking sheet lined with baking paper. Top with the prepared fruit.

Bake yeast cake

Bake the topped yeast cake for approx. 30 minutes (stick test!).
