Description

This corn and chicken pie is a comforting and delicious recipe, perfect for a family meal or a casual dinner. The combination of the sweetness of the corn with the tender chicken and caramelized onions creates a unique flavor that everyone will love. I have been preparing it for years and it is always a success. It is ideal to take advantage of leftover roast or cooked chicken. Also, you can add other vegetables such as peppers or zucchini to make it even more nutritious. Go ahead and try it, I assure you that you will not regret it!

Ingredients (9 ingredients)

  • 1 piece pie dough disc
  • 0.5 piece chicken supreme
  • 1 piece egg
  • 2 piece corns
  • 0.5 piece white onion
  • 0.5 piece red onion
  • 1 rama spring onion
  • 1 rama leek
  • 1 cucharada sopera mustard (in paste or grain)

Preparation (8 steps)

Cook the corn

Thermomix® Setting
25 min/212°F/Speed 1 100

Place the 2 corns in the Thermomix glass. Add water to cover. Program 25 Min./100°C/Stufe 1. Verify that the corn is tender. Remove and let cool.

Cook the chicken

Thermomix® Setting
20 min/212°F/Speed 1 100

Place ½ chicken supreme in the Thermomix glass. Add water to cover, along with celery, onion and carrot (optional). Program 20 Min./100°C/Stufe 1. Verify that the chicken is cooked. Remove and let cool.

Chop the onions

Thermomix® Setting
3 sec/Speed 5

Peel ½ white onion, ½ red onion, 1 spring onion branch and 1 leek branch. Cut the white and red onion into quarters. Place in the Thermomix glass and chop 3 Sek./Stufe 5. Remove and reserve.

Sauté the onions

In a pan, heat 1 tablespoon of oil over maximum heat. Add the chopped onions and sauté until golden and caramelized. Stir occasionally. If it dries, add a few tablespoons of hot water.

Mix the filling

Shell the cooked corns. Chop the cooked chicken into small pieces. In a bowl, mix the shelled corn, sautéed onions and chopped chicken. Add 1 tablespoon of mustard and season to taste.

Add the egg

Taste the filling and adjust the seasonings if necessary. Add 1 egg and mix well to integrate all the ingredients.

Fill the pie

Preheat the oven to 200°C. Cover a pie mold with 1 pie dough disc, previously greased. Fill with the corn, onion and chicken mixture. Decorate with dough strips. Beat an egg and paint the dough.

Bake the pie

Bake the pie in the preheated oven at 200-220°C for about 30 minutes, or until the dough is golden.
