Description

This apple, walnut and caramel cake is a real treat for any occasion. The combination of golden apples, crunchy walnuts and a touch of cinnamon creates an irresistible autumnal flavor. The caramel base gives it a special touch and a crunchy texture that contrasts wonderfully with the smoothness of the cake. Ingredients (10 ingredients)

  • 4 piece large golden type apples
  • 50 gr butter (room temperature)
  • 70 gr sugar
  • 1 tbsp cinnamon
  • 100 gr walnuts
  • 130 gr butter (room temperature)
  • 130 gr icing sugar
  • 3 piece eggs (220 gr. with shell)
  • 180 gr all-purpose flour
  • 8 gr baking powder

Ingredient preparation

Gather all the necessary ingredients for the recipe. Make sure you have the apples, butter at room temperature, sugar, cinnamon and walnuts ready to use.

Mold preparation

Thermomix® Setting
2 min/122°F/Speed 2 50

Prepare a round removable mold of 26 cm in diameter by 7 cm high. Place baking paper on the base of the mold. Mix 70 g of sugar with a teaspoon of cinnamon in a small bowl and reserve. Grease the mold with 50 g of butter melted in the Thermomix, 2 Min./50°C/Stufe 2. Sprinkle the sugar and cinnamon mixture all over the mold.

Covering the mold with walnuts

Cut the walnuts into not very large pieces. Cover the entire base of the mold with the cut walnuts. Reserve the mold in the refrigerator.

Preparation of the apples

Peel the apples and cut them into medium pieces. Reserve.

Dough preparation

Thermomix® Setting
2 min/Speed 3

In the Thermomix bowl, place 130 g of butter at room temperature and 130 g of icing sugar. Beat for 2 Min./Stufe 3 until a smooth cream is obtained. With the Thermomix running at Stufe 3, add the eggs one by one through the spout.

Incorporation of flour and yeast

Thermomix® Setting
15 Seg./Speed 4

Add 180 g of all-purpose flour and 8 g of baking powder to the Thermomix bowl. Mix for 15 Seg./Stufe 4. The dough should be creamy.

Incorporation of the apples

Thermomix® Setting
5 Seg./Linkslauf/Speed 2 Reverse

Preheat the oven to 180°C (heat up and down). Add the cut apples to the Thermomix bowl. Mix for 5 Seg./Linkslauf/Stufe 2 to integrate the apples gently.

Pouring the dough into the mold

With the help of two spoons, pour the dough into the prepared mold, starting with the contour and ending in the central area. Smooth the surface well.

Baking the cake

Put the cake in the preheated oven at 180°C for 45 minutes. Prick the center of the cake with a toothpick to check that it comes out completely dry. If not, leave it a few more minutes.

Cooling and unmolding

Remove the cake from the oven and let it cool completely at room temperature before unmolding. Remove the ring from the mold and flip the cake onto a serving plate.
