Description

This chicken and pumpkin pie is a comforting and delicious recipe, perfect for a family meal or a special brunch. The combination of tender chicken with the sweetness of Japanese pumpkin and the spicy touch of turmeric and nutmeg creates a unique and very pleasant flavor. I always use homemade dough for the pie, but you can also use store-bought dough to save time. It is a dish that can be enjoyed both hot and cold, and is ideal for taking on a picnic or an outdoor meal. Go ahead and try this recipe and surprise everyone with this pie full of flavor!

Ingredients (8 ingredients)

  • 2 piece pie dough discs
  • 1 piece chicken leg and thigh
  • 0.5 piece Japanese pumpkin
  • 1 piece egg
  • 60 gramos fresh cheese
  • 1 tbsp turmeric
  • 1 tbsp mustard
  • 0.5 tbsp nutmeg

Preparation (8 steps)

Cook the chicken

Thermomix® Setting

Place 1 chicken leg and thigh (skinless) or half chicken breast in the Thermomix bowl. Add plenty of water to cover the chicken. Optionally, add carrot, bay leaf, leek and onion for a homemade broth. Cook for 30 Min./Varoma/Stufe 1. Remove the chicken and reserve the broth (optional).

Cook the pumpkin

Wrap ½ Japanese pumpkin in cling film. Cook in the microwave for 10 minutes upside down. Carefully turn over and cook for 10 more minutes. Remove and let cool.

Prepare the pumpkin purée

Once the pumpkin is cooked, remove the seeds with a spoon and extract the pulp. Place the pulp in the Thermomix bowl and crush for 10 Seg./Stufe 4 to obtain a smooth purée.

Shred the chicken

With the help of a fork and/or knife, remove all the meat from the cooked chicken and cut into small pieces. If a finer texture is preferred, place the chicken in the Thermomix bowl and crush for a few seconds at Stufe 4. Adjust the time according to the desired texture.

Mix the filling

Add the shredded chicken to the pumpkin purée in the Thermomix bowl. Add 1 dessert spoon of turmeric, ½ dessert spoon of nutmeg and 1 dessert spoon of mustard. Mix for 10 Seg./Stufe 3.

Add the egg

Add 1 egg to the filling in the Thermomix bowl. Mix for 5 Seg./Stufe 3.

Assemble the pie

Grease a pie pan and cover it with one of the dough discs. Pour the chicken and pumpkin filling over the dough. Distribute 60 grams of fresh cheese in cubes over the filling.

Bake the pie

Cover the pie with the second dough disc (optional). Join the edges and prick the surface with a fork. Bake in the preheated oven at 200-220 ºC for about 30 minutes or until the dough is golden.
