Description

Classic German mole cake with cream filling and chocolate sprinkles.

Ingredients (13 ingredients)

  • 200 g Margarine
  • 250 g Sugar
  • 6 Stück Egg yolk
  • 100 g Flour
  • 25 g Cornstarch
  • 100 g Ground nuts
  • 100 g Chocolate sprinkles
  • 0.5 P Baking powder
  • 6 Stück Egg white
  • 0.75 l Cream
  • 2 P Vanilla sugar
  • 3 EL Chocolate drink powder
  • Powdered sugar

Preparation (10 steps)

Mix butter and sugar until fluffy

Put 200g margarine and 250g sugar into the mixing bowl and mix for 3 min./speed 4 until fluffy.

Add more ingredients

Gradually add 6 egg yolks, 100g flour, 25g cornstarch, 100g ground nuts and 100g chocolate sprinkles to the mixing bowl and mix for 1 min./speed 3.

Fold in egg whites

Carefully fold 1/2 packet of baking powder and 6 egg whites into the dough in the mixing bowl. Use the spatula for this.

Bake dough

Line a springform pan with baking paper and pour in the dough. Bake in a preheated oven at 175°C top/bottom heat for approx. 60 minutes.

Hollow out the cake

Remove the cake from the mold and hollow it out with a spoon until an approx. 2 cm wide edge remains. Crumble the hollowed-out mass finely and set aside.

Finish baking the cake

Bake the hollowed-out cake again for approx. 15 minutes at 200°C top/bottom heat.

Whip the cream until stiff

For the filling, put 3/4 l cream into the mixing bowl and whip until stiff with the butterfly for 2-3 min./speed 3.5. Observe the cream so that it does not turn into butter.

Prepare filling

Add 2 packets of vanilla sugar and 3 tbsp chocolate drink powder to the stiffly beaten cream in the mixing bowl and stir in for 20 sec./speed 2.

Mix in cake crumbs

Add the crumbled cake mixture (except for 3 tbsp for garnish) to the cream in the mixing bowl and carefully mix with the spatula.

Fill and garnish the cake

Pour the filling onto the base and spread it out. Spread the remaining crumbs on top and sprinkle with chocolate drink powder and powdered sugar.
