Description

These small angel hair cakes are a traditional delight, perfect to enjoy with the family during the Christmas holidays or on any special occasion. The dough, made with lard, sugar and a touch of cinnamon, melts in your mouth, while the angel hair filling provides a soft and delicate sweetness. The recipe is simple, although it requires a little patience to form the cakes. I have been preparing them for years and they are always a success. Go ahead and try them, you will love them! They are ideal to accompany coffee or tea.

Ingredients (11 ingredients)

  • 1 kg plain flour
  • 400 gr lard
  • 400 gr sugar
  • 1 kg angel hair
  • 3 piece eggs
  • 1 piece egg for painting
  • 100 ml mistela
  • 1 tbsp cinnamon
  • 1 packet baking powder
  • 1 pinch salt
  • 2 piece grated lemons

Dough preparation

Thermomix® Setting
20 Seg./Vel. 4

In the Thermomix bowl, add the lard and sugar. Mix for 20 seconds/Speed 4. Add the 3 eggs, mistela and cinnamon. Mix for 15 seconds/Speed 3. Incorporate the sifted flour little by little and the baking powder. Knead for 2 minutes/Kneading Function. Remove the dough from the bowl, wrap in transparent film and let it rest in the refrigerator for 1 hour.

Incorporation of liquid ingredients

Add the 3 eggs, mistela and cinnamon to the bowl. Mix for 15 seconds/Speed 3.

Final kneading

Thermomix® Setting

Incorporate the sifted flour little by little and the baking powder. Knead for 2 minutes/Kneading Function.

Forming the cakes

Preheat the oven to 220°C. Roll out the dough with a rolling pin until it is 3-4 mm thick. With a flower-shaped cookie cutter, cut out the pieces. Place a portion of angel hair in the center of each flower. Cover with another flower and join the edges with your fingers. Place the cakes on a baking tray.

Paint and bake

Beat the remaining egg and paint the cakes with a brush. Bake at 180°C for 15-18 minutes, or until golden brown. Remove from the oven and let cool completely before serving.
