Description

This creamy pumpkin pasta is a delightful autumn dish that's both comforting and flavorful. The sweetness of the pumpkin pairs perfectly with the savory sage and a touch of vodka for a unique twist. Ingredients (10 ingredients)

  • 1 piece small pumpkin
  • 2 tbsp olive oil
  • 12 piece sage leaves
  • 1 piece small onion
  • 2 clove garlic cloves
  • 0.25 tsp chilli flakes
  • 500 g pasta
  • 75 g tomato purée
  • 75 ml vodka
  • 100 ml double cream

Preparation (8 steps)

Cook the pumpkin

Thermomix® Setting
15-20 min/Varoma/Speed 1 Varoma

Cut the pumpkin into smaller pieces. Place the pumpkin pieces into the Varoma dish. Fill the mixing bowl with 500ml water. Steam the pumpkin for 15-20 minutes or until tender. Set aside to cool slightly.

Pumpkin puree

Thermomix® Setting
30 sec/Speed 8

Add the cooked pumpkin to the mixing bowl and puree for 30 seconds/Stufe 8 until smooth. Set aside.

Crisp sage leaves

Heat the olive oil in a large frying pan over medium heat. Fry the sage leaves for 30 seconds-1 minute until crisp. Lift out of the oil using a slotted spoon and put on a plate lined with a sheet of kitchen paper to drain off the excess oil. Set aside.

Sauté onion and garlic

Thermomix® Setting
10 min/248°F/Speed 1 120

Add the onion to the mixing bowl and chop for 3 seconds/Stufe 5. Add the sage oil and sauté for 10 minutes/120°C/Stufe 1. Add the garlic and chilli flakes and cook for 1 minute/120°C/Stufe 1.

Cook the pasta

Cook the pasta according to package instructions in a pot of boiling water. Drain, reserving a mugful of the cooking water.

Make the sauce

Thermomix® Setting
2 min/194°F/Speed 1 90

Add the tomato purée and vodka to the mixing bowl and cook for 3 minutes/100°C/Stufe 1 to evaporate the alcohol. Add the pumpkin purée and double cream and cook for 2 minutes/90°C/Stufe 1.

Combine pasta and sauce

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Add the cooked pasta to the mixing bowl and stir for 20 seconds/Linkslauf/Stufe 2, adding enough of the reserved pasta water to form a thick sauce.

Serve

Serve the pasta topped with the crispy sage leaves.
