Description

Stuffed beef roulades in red wine sauce are a hearty main course from the Thermomix® featuring beef roulades, bacon, pickles, and shallots. Preparation in the Thermomix® takes about 140 minutes, of which 60 minutes are active working time. The recipe is designed for 6 servings and is particularly suitable for festive occasions or as a warming winter meal. Ideal for lovers of hearty meat dishes.

Ingredients (20 ingredients)

  • 6 Scheiben Beef roulades
  • 160 g Beef roulade
  • 6 Scheiben Bacon, streaky
  • 6 Stück Pickles, thick, halved lengthwise
  • 2 TL Mustard
  • 6 Stück Shallots, large, finely chopped
  • 1 EL Clarified butter
  • Salt
  • Pepper from the mill
  • Kitchen twine
  • 1 Bund Soup vegetables (1 leek, carrot, celery each), finely chopped
  • 2 Stück Shallots, large, roughly chopped
  • 1 TL Tomato paste
  • 1 EL Sugar
  • 400 ml Red wine (dry)
  • 400 ml Beef broth or stock
  • 60 g Butter, ice-cold, cubed
  • 1 Bund Chives, for garnish
  • Salt
  • Pepper from the mill

Preparing the ingredients

Weigh out all ingredients and have them ready. Clean and finely chop the soup vegetables. Peel and roughly chop the shallots. If necessary, flatten the beef roulades thinly with a meat mallet or a pan (approx. 0.5-1 cm thick).

Filling and wrapping the roulades

Season the roulades with salt and pepper. Spread each roulade with 2 tsp mustard, top with a slice of bacon, half a pickle, and some finely chopped shallots. Fold in the sides and roll up the roulade. Tie into a package with kitchen twine.

Preheat oven

Preheat the oven to 160°C convection oven.

Chop soup vegetables

Put the finely chopped soup vegetables and the roughly chopped shallots into the mixing bowl and chop for 5 sec/speed 5. Scrape down the sides with the spatula.

Sauté vegetables

Add the chopped vegetables with 1 tsp tomato paste and 1 tbsp sugar to the mixing bowl and sauté for 5 min/120°C/speed 1.

Add red wine and reduce

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Pour 400 ml red wine into the mixing bowl in three portions. After each addition, let it reduce for 3 min/Varoma/speed 1 without the measuring cup.

Add broth

Thermomix® Setting

Pour 400 ml beef broth or stock into the mixing bowl and stir for 5 sec/speed 4.

Sear roulades

Heat 1 tbsp clarified butter in a roaster or braising pan. Sear the roulades all over at high heat until crispy and remove again.

Braise roulades

Place the seared roulades in the roaster or braising pan with the sauce and place in the preheated oven on the middle rack for 90 minutes. Braise with or without a lid as needed.

Strain the sauce

After the cooking time, remove the roulades from the pan and keep warm. Pass the sauce through a sieve into a pot. Scrape the strained vegetables from the lower edge of the sieve.

Reduce the sauce

Let the strained sauce simmer in the pot for 3-5 minutes.

Mount the sauce

Remove the pot from the stove. Melt 60 g ice-cold butter cubes into the sauce while stirring until the sauce is bound and creamy.

Serve

Arrange the beef roulades with the sauce and garnish with chives. Potatoes, wedding noodles, or Spätzle go well with this.
