Description

This festive turkey with honey-glazed sweet potatoes, prepared in the Thermomix®, is a hearty main course with turkey, apples, and marjoram. The recipe is particularly suitable for the winter season and festive occasions such as Christmas. With a preparation time of 270 minutes, including 60 minutes of active working time, you get 8 servings. Ideal as a family meal or for a festive dinner.

Ingredients (15 ingredients)

  • 100 g White bread
  • 200 g Onions
  • 2 Stück Red apples
  • 10 Zweig Marjoram
  • 1 Stück Egg yolk (size M)
  • Salt
  • Pepper
  • 1 Stück Ready-to-cook turkey (approx. 3.5-4 kg)
  • 1 EL Oil
  • 1 Bund Soup vegetables
  • 2 Glas Poultry stock
  • 1.2 kg Sweet potatoes
  • 4 EL Extra virgin olive oil
  • 7 EL Honey
  • 10 g Cornstarch

Preparation (15 steps)

Chop bread

Cut 100 g white bread into cubes and place in the mixing bowl. Chop 5 sec/speed 5 and transfer.

Chop onions

Thermomix® Setting

Peel 200 g onions, quarter and place in the mixing bowl. Chop 3 sec/speed 5. Use the spatula to scrape down the sides.

Chop apples

Thermomix® Setting

Wash 2 red apples, quarter, core and place in the mixing bowl. Chop 3 sec/speed 4 and add to the onions.

Chop marjoram

Thermomix® Setting

Wash 10 sprigs of marjoram, shake dry, pluck the leaves (keep some for garnish) and place in the mixing bowl. Chop 3 sec/speed 5 and add to the remaining ingredients.

Mix stuffing

Mix bread, onions, apples, marjoram, 1 egg yolk, salt and pepper well in a bowl and knead to form a stuffing.

Prepare turkey

Preheat the oven to 175 °C top/bottom heat. Wash 1 turkey (approx. 3.5-4 kg) thoroughly inside and out and pat dry. Mix 2 tsp salt and 1 tsp pepper, season the turkey thoroughly inside with it and add the apple stuffing. Fold the parson's nose inwards and close the opening with wooden skewers and kitchen twine. Then tie the legs together. Rub the turkey with salt and brush with 1 tbsp oil.

Sear turkey

Place the turkey breast-side down on the baking sheet of the oven and cook in the preheated oven for 3-3 1/2 hours.

Chop soup vegetables

Clean 1 bunch of soup vegetables and cut into coarse pieces. Place in the mixing bowl and chop 5 sec/speed 4.

Cook turkey with soup vegetables

After about 1 hour, remove the turkey from the oven and turn it over with the help of a spatula and a carving fork. Spread the chopped soup vegetables around the turkey. Pour in 1 jar of poultry stock and return the turkey to the oven.

Finish cooking turkey

About 30 minutes before the end of the cooking time, pour in the remaining poultry stock. Finish roasting the turkey (check the core temperature with a meat thermometer if necessary, it should be 80-86.5 °C) and baste with the roasting juices from time to time.

Prepare sweet potatoes

Peel 1.2 kg sweet potatoes and cut into wedges.

Caramelize sweet potatoes (1st portion)

Heat 2 tbsp olive oil in a large pan and fry half of the sweet potatoes in it for 6-8 minutes until cooked. Season the sweet potatoes with salt and pepper. Shortly before the end of the cooking time, add 2 tbsp honey and caramelize the sweet potatoes with it. Keep the sweet potatoes warm.

Caramelize sweet potatoes (2nd portion)

Proceed in the same way with the second half of the sweet potatoes.

Prepare sauce

5-10 minutes before the end of the cooking time, remove the turkey from the oven again and brush with 3 tbsp honey and let it caramelize. Remove the turkey from the oven and place on a platter and cover loosely (e.g. with aluminum foil). Pass the roasting juices through a sieve into a saucepan, skim off the fat, then bring the roasting juices to a boil and simmer for 5-7 minutes.

Thicken sauce

Stir 10 g cornstarch with 1 tbsp water until smooth and add to the sauce while stirring. Bring the sauce to a boil again and simmer for about 1 minute, then season with salt and pepper.
