Description

This recipe for duck breast with orange sauce, nuts and kale is an absolute highlight for festive occasions! I particularly like to make it in winter, when kale is in season. The combination of the crispy duck breast, the slightly bitter kale, the sweet cranberries and the fruity orange sauce is simply unbeatable. The preparation is a little more complex, but the result is well worth it. The duck breast must thaw overnight, so some planning is required. Served with fresh bread or potatoes a poem!

Ingredients (11 ingredients)

  • 800 g Duck breast, deep frozen
  • Sea salt
  • Pepper
  • 2 Zweig Rosemary
  • 200 g Kale, fresh
  • 2 piece Red onions
  • 2 tbsp Olive oil
  • 60 g Cranberries
  • 50 g Peanuts, roasted
  • 200 ml Orange juice
  • 50 g Butter

Preparation (7 steps)

Prepare duck breast

Let the deep-frozen duck breasts thaw overnight in the refrigerator. Season the thawed duck breasts with sea salt and pepper. Preheat the oven to 180°C top/bottom heat.

Chop rosemary

Thermomix® Setting

Put the rosemary sprigs in the mixing bowl and chop for 3 sec./speed 7. Transfer and set aside.

Prepare kale

Pluck the kale and remove large stems. Peel and quarter the red onions.

Chop onions

Thermomix® Setting
3 sec/Speed 5

Put the quartered onions in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté kale

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Add the olive oil to the onions in the mixing bowl and add the kale. Sauté for 5 min./120°C/reverse rotation speed 1.

Add cranberries and peanuts

Thermomix® Setting
2 min/248°F/Linkslauf Speed 1 120 Reverse

Add the cranberries and peanuts to the kale in the mixing bowl. Season with sea salt and pepper and heat for another 2 min./120°C/reverse rotation speed 1.

Prepare orange sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Remove the kale from the mixing bowl and set aside. Put the orange juice and butter in the mixing bowl and heat for 5 min./100°C/speed 2 without a measuring cup until the sauce thickens slightly. Season with sea salt and pepper.
