Description

This Peruvian sirloin stir fry is a dish that evokes memories of travel and exotic flavors. The combination of tender meat with fresh vegetables and the bittersweet touch of soy sauce and red wine vinegar is simply irresistible. I often prepare it at home, and it is always a resounding success. It is perfect for a special dinner or to surprise your guests with a different and flavorful dish. Ingredients (13 ingredients)

  • 1 kilogramo tenderloin
  • 2 piece onions
  • 4 piece tomatoes
  • 1 piece yellow chili pepper
  • 100 mililitros red wine vinegar
  • 120 mililitros soy sauce
  • beef broth
  • 1 cucharadita ground garlic
  • 0.5 cucharadita grated ginger
  • salt
  • cilantro
  • french fries
  • white rice

Preparation (6 steps)

Meat preparation

Cut 1 kilogram of tenderloin into medium cubes, removing nerves or fat. Season with ground black pepper to taste and reserve.

Vegetable preparation

Cut 2 onions into large wedges, removing the heart. Cut 4 tomatoes also into wedges of the same size. Cut 1 yellow chili pepper into thin julienne strips. Chop cilantro to garnish (optional).

Sautéing the meat

Heat a large skillet or wok with oil over high heat. Brown the meat cubes on all sides. This process should be quick to prevent the meat from overcooking.

Garlic and ginger sofrito

Thermomix® Setting

Add 1 teaspoon of ground garlic and ½ teaspoon of grated ginger to the Thermomix bowl. Program 3 seconds/speed 7 to chop finely.

Add vegetables and cook

Add the onions, chili peppers, and tomatoes to the pan with the meat. Incorporate 100 ml of red wine vinegar, 120 ml of soy sauce, a ladle of beef broth, the chopped garlic and ginger from the Thermomix, and salt to taste. Sauté everything vigorously to integrate the flavors well.

Finish and serve

Incorporate the chopped cilantro and continue sautéing until the tomatoes begin to soften. Serve immediately accompanied by french fries and grainy white rice.
