Description

Sweet rolls filled with a cream mixture.

Ingredients (13 ingredients)

  • 250 g Milk
  • 100 g Sugar
  • 20 g Yeast
  • 550 g Flour
  • 2 Stück Eggs
  • 80 g Margarine
  • 0.5 TL Salt
  • 1 Stück Egg
  • 400 g Cream
  • 2 Pck. Cream stabilizer
  • 200 g Sour cream
  • 40 g Sugar
  • 1 Pck. Vanilla sugar

Preparation (13 steps)

Prepare yeast

Thermomix® Setting
2,5 min/99°F/Speed 2 99°F

Add milk, sugar and yeast to the mixing bowl and stir for 2.5 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
2,5 min/Kneading speed

Add flour, eggs, margarine and salt and knead for 2.5 min./kneading level.

Let the dough rise

Place the dough in a lightly floured bowl and let it rise, covered, for about 1 hour.

Clean mixing bowl

Rinse and dry the mixing bowl.

Portion the dough

Place the dough on a lightly floured work surface and cut into approx. 20 equally sized pieces.

Shape rolls and let rest

Shape the pieces into balls, place on a baking sheet and let rest, covered, for 20 minutes.

Preheat oven

Preheat oven to 180°C top/bottom heat.

Brush rolls

Whisk the egg and brush the rolls with it.

Bake rolls

Bake for approx. 20-25 minutes and then let cool.

Whip cream

Thermomix® Setting
Speed 3

Insert the whisk attachment. Add cream and cream stabilizer to the mixing bowl and whip without time setting/speed 3 until the cream has the desired firmness and transfer to a bowl.

Prepare sour cream

Thermomix® Setting
1 min/Speed 3

Insert the whisk attachment again. Add sour cream, sugar and vanilla sugar to the mixing bowl and stir for 1 min./speed 3.

Mix cream

Add the cream to the whipped cream and fold in slowly.

Fill rolls

Cut each roll crosswise to 3/4, open slightly, use a knife to remove some of the top and bottom and add the cream and fold closed.
