Description

With the Thermomix®, these seed bread rolls from the baking sheet are ready in no time. The main ingredients are wheat flour, whole wheat flour, sourdough, and poppy seeds.   • 400 g Wheat Flour Type 550
  • 50 g Whole Wheat Flour
  • 220 ml Water
  • 70 g Sourdough
  • 8 g Alnatura Fresh Yeast
  • 1 EL Honey
  • 2 TL Salt
  • 20 g Poppy Seeds
  • 30 g Sesame Seeds
  • 30 g Alnatura Sunflower Seeds

Preparation (6 steps)

Mix Flour and Water

Mix both types of flour (400 g wheat flour type 550 and 50 g whole wheat flour) in a bowl. Roughly mix 220 ml of water and 1 tbsp of honey with the flour. Cover the bowl with a damp kitchen towel and let rest for about 30 minutes.

Knead the Dough

Add sourdough (70 g), yeast (8 g), and salt (2 tsp). Insert the Patix dough knife instead of the standard knife. Knead for 2 min/kneading speed until the dough becomes elastic. Tip: If the dough is too firm, add another 10 ml of water.

Let the Dough Rise

Flour proofing baskets, place dough inside and let rise for 1.5 hours at room temperature. Every 30 minutes, stretch and fold on a floured surface. To do this, carefully lift the dough on one side, stretch it slightly and fold it over the middle of the dough to the opposite side. Repeat on the other 3 sides. Then place it back into the bowl with the seam side down and cover.

Preheat the Oven

Preheat the oven to 250 °C top/bottom heat with a baking sheet and a heat-resistant bowl on the bottom of the oven.

Portion and Shape the Dough

Divide the dough into 24 equal portions. Place poppy seeds (20 g), sesame seeds (30 g) and sunflower seeds (30 g) in small bowls. Press dough balls into the seeds and arrange them on a piece of baking paper in the shape of a sun.

Baking

Pull the baking paper onto the hot baking sheet and pour 1 glass of hot water into the heat-resistant bowl. Caution: hot steam! Close the oven door quickly and bake for about 10 minutes, reduce the temperature to 210 °C and bake for another 10 minutes.
