Description

This recipe for duck breast with red wine shallots is a real treat! The combination of tender duck breast and the sweet and tart red wine shallot sauce is simply unbeatable. I especially like to make this dish in autumn or winter, when it's cold outside and you want something hearty on your plate. The preparation is a bit more elaborate, but the result is worth it. The duck breast is fried crispy in the pan and then cooked in the oven. The shallots are prepared in the Thermomix® and refined with red wine, honey and spices to create a delicious sauce. A feast for special occasions!

Ingredients (12 ingredients)

  • 500 g Shallots
  • 1 tbsp Oil
  • to taste Salt
  • to taste Pepper
  • 0.1 l Red wine
  • 1 tsp Vegetable broth
  • 3 tsp Honey
  • 1 piece Peppercorns
  • 1 tbsp Red wine vinegar
  • 2 piece Duck breast fillets
  • 370 g Duck breast fillet
  • 2 Zweige Rosemary

Preparation (8 steps)

Prepare shallots

Cover 500 g shallots with water and bring to a boil in a saucepan. Simmer for 1-2 minutes. Then quench and peel.

Sauté shallots

Put the peeled shallots into the mixing bowl, add 1 tbsp oil and sauté for 3 min./120°C/speed 1.

Prepare shallot sauce

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 0.1 l red wine, 1/8 l water, 1 tsp vegetable broth, 3 tsp honey, 1 peppercorns and 1-2 tbsp red wine vinegar to the shallots in the mixing bowl and simmer for 20 min./100°C/speed 1 without the measuring cup.

Prepare duck breast

Wash and pat dry 2 duck breast fillets (approx. 370 g each). Cut the skin into a diamond shape.

Fry duck breast

Fry the duck breast fillets in an ovenproof pan on the skin side over high heat for approx. 5 minutes. Turn and fry for another approx. 5 minutes. Season with salt and pepper.

Cook duck breast in the oven

Wash 2 sprigs of rosemary and add to the duck breast fillets in the pan, except for a little for garnish. Place the pan in the preheated oven (electric oven: 175 °C/fan oven: 150 °C/gas: level 2) and continue to cook for approx. 15 minutes.

Refine sauce

Thermomix® Setting
2 min/212°F/Speed 1 100

Remove the duck breast from the oven and let it rest for approx. 5 minutes. Degrease the roasting juices and pour into the mixing bowl with the shallots. Heat for 2 min./100°C/speed 1.

Serve

Cut the duck breast fillets and serve warm or cold with the shallots. Garnish with fresh rosemary.
