Description

This chicken breast recipe is perfect for a festive dinner or a special occasion. The combination of creamy cheese, sweet cranberry jelly, and salty Parma ham creates a delightful flavor profile that's sure to impress. Ingredients (9 ingredients)

  • 4 piece chicken
  • 4 tbsp cheese
  • 2 tbsp cranberry jelly
  • 8 slice Parma ham
  • 500 g frozen roast potatoes
  • 85 g pack of stuffing
  • 2 tbsp olive oil
  • 0.5 piece lemon
  • 100 g rocket

Preparation (5 steps)

Prepare the potatoes

Thermomix® Setting
10 sec/Speed 3

Preheat the oven to 200°C (180°C fan/gas mark 6). Place the frozen roast potatoes and stuffing mix in a bowl. In the Thermomix, add the olive oil and season with salt and pepper. Mix for 10 Sec./Stufe 3. Transfer the potatoes to a roasting tin and roast in the preheated oven for 30 minutes.

Prepare the chicken breasts

Cut each chicken breast in half horizontally, being careful to cut only halfway through. Open them out like a book. Spread 1 tbsp cheese and ½ tbsp cranberry jelly inside each chicken breast. Close the breasts and wrap each in 2 slices of Parma ham.

Cook the chicken

Line a baking tray with foil and place the prepared chicken breasts on top. Once the potatoes have been cooking for 10 minutes, place the chicken tray in the oven and cook for the remaining 20 minutes.

Prepare the rocket salad

Thermomix® Setting
5 sec/Speed 2

Remove the chicken and potatoes from the oven. In the Thermomix, add the lemon juice and rocket. Mix for 5 Sek./Stufe 2. Toss the potatoes with the lemon juice and rocket.

Serve

Serve the chicken breasts with the potatoes on the side.
