Description

This marinated chicken breast recipe is a summer staple in my kitchen! The combination of cider vinegar, mustard, garlic, lime, and lemon creates a tangy and slightly sweet marinade that infuses the chicken with incredible flavor. It's perfect for grilling and makes a delicious, healthy main course. I often prepare the marinade the night before to let the chicken soak up all the goodness. Serve it with a fresh salad or grilled vegetables for a complete and satisfying meal. This recipe is also great for meal prepping – the marinated chicken stays juicy and flavorful even after reheating.

Ingredients (10 ingredients)

  • 0.25 cup cider vinegar
  • 3 tablespoon prepared coarse-ground mustard
  • 3 clove garlic, peeled and minced
  • 1 piece lime, juiced
  • 0.5 piece lemon, juiced
  • 0.5 cup brown sugar
  • 1.5 teaspoon salt
  • ground black pepper
  • 6 tablespoon olive oil
  • 6 piece skinless, boneless chicken breast halves

Preparation (4 steps)

Prepare the marinade

Thermomix® Setting
10 sec/Speed 3

Add ¼ cup cider vinegar, 3 tablespoons prepared coarse-ground mustard, 3 cloves garlic, peeled, 1 lime, juiced, ½ lemon, juiced, ½ cup brown sugar, 1 ½ teaspoons salt, and ground black pepper to taste into the mixing bowl. Mix for 10 Sec./Stufe 3.

Emulsify the marinade

Thermomix® Setting
20 sec/Speed 3

With the mixer running at Stufe 3, slowly pour 6 tablespoons olive oil through the hole in the lid. Mix for 20 Sek./Stufe 3 to emulsify the marinade.

Marinate the chicken

Place 6 skinless, boneless chicken breast halves in a large glass or ceramic bowl. Pour the marinade over the chicken and toss evenly to coat. Cover and marinate in the refrigerator for at least 8 hours or overnight.

Grill the chicken

Preheat an outdoor grill for high heat. Lightly oil the grill grate. Place chicken on the preheated grill, and cook 6 to 8 minutes per side, until juices run clear. Discard any remaining marinade.
