Ingredients (9 ingredients)

  • 3 cups chicken broth
  • 1 cup wild rice
  • cooking spray
  • 26.5 ounce can of cream of mushroom soup
  • 1 pound cubed cooked chicken
  • 0.5 cup diced carrot
  • 0.25 cup diced onion
  • 2 teaspoons red pepper flakes
  • 4 piece large red bell peppers, halved lengthwise and seeded

Cook wild rice

Thermomix® Setting

Pour 3 cups of chicken broth into the Thermomix bowl. Add 1 cup of wild rice. Cook for 55 min/100°C/Speed 1. Let it cool for 5 minutes.

Preheat oven

Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch casserole dish with cooking spray.

Mix filling ingredients

In a bowl, mix 1 (26.5 ounce) can of cream of mushroom soup, 1 pound of cubed cooked chicken, ½ cup of diced carrot, ¼ cup of diced onion, and 2 teaspoons of red pepper flakes. Fold in the cooked wild rice.

Assemble stuffed peppers

Arrange 4 large red bell peppers, halved lengthwise and seeded, in the prepared casserole dish. Fill each half with the chicken-rice filling. Cover the casserole dish loosely with aluminum foil.

Bake stuffed peppers

Bake in the preheated oven until the filling is heated through and bubbling, about 45 minutes.
