Description

This sweet and sour chicken with peaches is a delicious reinterpretation of Peruvian cuisine, perfect for a special meal or a dinner with friends. The combination of tender chicken with the sweetness of the peaches and the exotic touch of the tamarind sauce creates an explosion of flavors in every bite. Ingredients (15 ingredients)

  • 1 piece chicken breast
  • 2 piece peppers
  • 0.5 can peach
  • 3 clove ground or sliced garlic
  • 1 trozo sliced ginger
  • 4 cucharadas soperas tamarind sauce
  • 1 c/n chicken broth
  • 3 cucharadas soperas soy sauce
  • 1 cucharada sopera oyster sauce
  • 1 c/n sugar
  • 2 cucharadas soperas chuño or cornstarch
  • 1 puñado snow peas
  • 1 al gusto salt
  • 1 al gusto pepper
  • 1 c/n sesame oil

Preparation (7 steps)

Prepare the chicken

Cut the chicken breast into strips approximately 2 fingers thick and then transversely to obtain cubes. Salt and pepper to taste. Set aside.

Chop garlic and ginger

Insert 3 cloves of garlic into the glass and chop 3 sec./Speed 7. Remove and set aside. Insert a piece of ginger in slices into the glass and chop 3 sec./Speed 7. Remove and set aside.

Prepare peppers and peaches

Cut the peppers into julienne strips and the canned peaches into medium cubes. Set aside separately.

Sauté garlic, ginger, peppers and snow peas

Thermomix® Setting
3 min/248°F/Velocidad 1 120

Add sesame oil to the glass. Incorporate the chopped garlic and ginger and sauté 3 min./120°C/Speed 1. Add the peppers in julienne strips and the snow peas and sauté 3 min./120°C/Speed 1.

Add sauce and peaches

Thermomix® Setting
5 min/212°F/Velocidad 1 100

Add 4 tablespoons of tamarind sauce, the cubed peaches, chicken broth q/s, 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, salt and sugar to taste (or the juice from the peaches). Cook 5 min./100°C/Speed 1.

Thicken the sauce

Thermomix® Setting
3 min/212°F/Velocidad 2 100

Dissolve 2 tablespoons of chuño or cornstarch in a little cold water. Add to the glass and program 3 min./100°C/Speed 2. Remove immediately with the spatula to prevent lumps from forming.

Incorporate the chicken

Thermomix® Setting
5 min/212°F/Giro a la izquierda/Velocidad 1 100 Reverse

Add the previously browned chicken to the glass and program 5 min./100°C/Reverse direction/Speed 1. Verify that the chicken is perfectly cooked.
