Description

This curried chicken and new potato traybake is a flavorful and easy meal perfect for a weeknight dinner. The chicken drumsticks are marinated in a fragrant blend of spices and yogurt, then baked with tender new potatoes, tomatoes, and red onion. The coriander adds a fresh touch, and the yogurt served on the side provides a cooling contrast to the spices. I love how simple this dish is to prepare, and it's always a hit with my family. It's also great for meal prepping – just cool, freeze, and reheat when you're ready to enjoy!

Ingredients (11 ingredients)

  • 8 piece chicken drumsticks
  • 3 tbsp olive oil
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 150 ml natural yogurt
  • 500 g new potatoes
  • 4 piece large tomatoes
  • 1 piece red onion
  • 1 pack coriander

Preparation (5 steps)

Marinate the Chicken

Place the 8 chicken drumsticks in a large bowl. Add 1 tbsp olive oil, 1 tsp garlic paste, 1 tsp ginger paste, 1 tsp garam masala, 1 tsp turmeric, and 2 tbsp natural yogurt. Toss together with your hands until the chicken is well coated. Let it marinate for at least 30 minutes (or overnight in the fridge).

Prepare Potatoes

Place the 500g new potatoes in a large roasting tin. Add the remaining 2 tbsp olive oil and season generously with salt and pepper. Toss to coat.

Add Chicken and Bake

Add the marinated chicken drumsticks to the roasting tin with the potatoes. Bake in a preheated oven at 180°C (160°C fan) for 40-45 minutes, or until the chicken is cooked through and golden brown.

Prepare Tomatoes and Onion

While the chicken and potatoes are baking, roughly chop the 4 large tomatoes and 1 red onion.

Final Assembly

Scatter the chopped tomatoes, red onion, and a small pack of chopped coriander over the chicken and potatoes. Season with salt and pepper to taste. Serve with the remaining natural yogurt on the side.
