Description

This roasted chicken is a timeless classic, perfect for a family meal or a special occasion. I often prepare it on Sundays, and the aroma that fills the house is simply irresistible. The crispy skin and tender flesh, flavored with herbs and garlic, make this dish a real treat. Slow cooking in the oven preserves all the flavor of the chicken. Feel free to accompany this dish with roasted potatoes or a green salad for a complete and balanced meal. A real delight to share!

Ingredients (8 ingredients)

  • 1 piece chicken
  • 1 piece onion
  • 1 clove garlic
  • to taste olive oil
  • 1 bouquet bouquet garni
  • to taste paprika
  • to taste salt or fine salt
  • to taste pepper

Preparation (8 steps)

Chicken preparation

Season the inside of the chicken with 3 nice pinches of salt, pepper, a little paprika and a bouquet garni (thyme, bay leaf).

External seasoning

Season the poultry on all sides with salt.

Dish preparation

In a dish, put a drizzle of olive oil and place the chicken there, on the slice. Add a drizzle of oil on the chicken.

Initial oven cooking

Place in the oven, a container of water to keep a soft chicken thanks to the steam. Bake at 220°C for 15 minutes on the first slice.

Cooking the second slice

Do the same on the second slice of the chicken for 15 minutes at 220°C.

Adding the herbs and final cooking

Once the chicken is golden brown, lower the heat to 180°C. Add the garlic in shirt, the onions in quarters, a little water, a little thyme and bake again for 20 minutes of cooking. Do not forget to baste the chicken several times during cooking, with the cooking juices to have a tender poultry.

Chicken rest

When the chicken is cooked, let it rest for 30 minutes, covered with aluminum foil. The chicken will rest and it will be even better.

Final reheating

Before sitting down to eat, reheat the chicken for about ten minutes in the oven, at 160°C and enjoy.
