Description

This creamy chicken with Parmesan mushrooms is a comforting and flavourful dish, perfect for a family meal or a special dinner. The combination of tender chicken, sautéed mushrooms and a creamy Parmesan sauce is simply irresistible. I prepare it often because it is very easy to make and always succeeds. In addition, it can be accompanied with white rice, mashed potatoes or a fresh salad. A complete and delicious dish that you will love! The paprika gives it a smoky touch and the Parmesan cheese an intense and delicious flavour. Go ahead and try it!

Ingredients (15 ingredients)

  • 2 piece chicken breasts
  • 2 piece chicken thighs
  • 1 piece spring onion
  • 1 bunch coriander
  • 960 ml water
  • 1 chorro oil
  • 1 pack fresh clean mushrooms
  • 3 tbsp wheat flour
  • 2 tazas chicken stock
  • 1 tsp paprika
  • 1 can milk cream
  • 150 gramos parmesan cheese
  • 1 pinch salt
  • 1 pinch pepper
  • 1 barra butter

Chicken cooking

25 min/212°F/Speed 1 100

Place the chicken breasts and thighs in the Thermomix bowl. Add the spring onion cut into pieces, the bunch of coriander and 960 ml of water. Season with salt to taste. Program 25 min./100°C/Stufe 1. Reserve the chicken and broth separately.

Sauté the mushrooms

Wash and cut the fresh mushrooms into slices or quarters. In a frying pan (outside the Thermomix), melt the stick of butter together with a splash of oil. Add the mushrooms and sauté until golden brown and have released their juice. Add the 3 tablespoons of wheat flour and stir until a paste is formed.

Sauce preparation

Pour the reserved chicken broth into the Thermomix bowl. Add the mushroom and flour mixture, the can of milk cream, salt, pepper and the teaspoon of paprika. Program 8 Min./90°C/Stufe 2.

Incorporation of cheese and chicken

Thermomix® Setting
10 min/194°F/Linkslauf Speed 1 90 Reverse

Add the 150 grams of grated Parmesan cheese to the Thermomix bowl. Program 2 Min./60°C/Stufe 3. Then add the chicken breasts and thighs cut into cubes or strips. Program 10 Min./90°C/Linkslauf Stufe 1.

Serve

Serve the chicken with mushrooms in hot sauce. Accompany with white rice, mashed potatoes or a salad.
