Description

This brick crispy chicken is a simple but tasty dish, perfect for a family meal or special occasion. The cooking technique under a brick (wrapped in aluminum foil for hygiene reasons!) ensures a crispy skin and juicy meat. Fresh lemon juice adds a touch of acidity that perfectly balances the rich flavors of the chicken. I often prepare it on Sundays, and it is always a sensation. Preparation is quick, but cooking requires a little patience. A comforting and delicious dish, ideal for poultry lovers.

Ingredients (6 ingredients)

  • 1 piece Aluminum foil
  • 15 ml Olive oil
  • 1.4 kg Whole chicken
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 2 piece Pressed lemon(s)

Preparation (7 steps)

Chicken preparation

Preheat the oven to 200°C. Brush the whole chicken (1.4 kg) with 15 ml of olive oil. Salt and pepper generously.

Preparation of the bricks

Carefully wrap the bricks in aluminum foil. This is crucial to avoid direct contact with food.

Initial cooking with Thermomix

Thermomix® Setting

Place the chicken in the Varoma. Pour 500 ml of water into the Thermomix bowl. Steam for 20 minutes / Varoma / Stufe 1.

Finishing in the pan

Heat a thick-bottomed skillet over medium-high heat. When the pan is hot, place the chicken in it, breast side down. Cover the chicken loosely with aluminum foil and place the wrapped bricks on top.

Cooking under the brick

Cook for about 15 minutes, checking a few times during cooking that the skin is coloring evenly, adjusting the heat as needed.

Turn the chicken over

Turn the chicken over, gently detaching the skin from the pan with a spatula. Replace the bricks on the chicken and continue cooking until cooked, about 20 minutes (or more for slightly larger chickens).

Adding lemon juice

Pour the juice of 2 squeezed lemons over the hot chicken. Let the chicken rest for 10 minutes before serving.
