Description

Dieses Gericht ist ein absoluter Knaller, wenn es mal etwas würziger sein soll! Das Hähnchen wird in einer Marinade aus Limettensaft, Ingwer und Paprika eingelegt und dann in der Pfanne gebraten. Der Reis wird mit Kokosnussmilch und Gewürzen im Thermomix® zubereitet, was ihm ein wunderbares Aroma verleiht. Die Kidneybohnen und Paprika sorgen für eine tolle Textur und zusätzliche Nährstoffe. Perfekt für ein schnelles und gesundes Mittag- oder Abendessen. Ich mache es gerne, wenn ich etwas Abwechslung auf dem Teller brauche. Es ist einfach zuzubereiten und schmeckt einfach köstlich!

Ingredients (14 ingredients)

  • 1 tbsp lime juice
  • 1 tsp oil
  • 0.5 tsp allspice
  • 1 tsp finely grated ginger
  • 1 clove garlic
  • 1 tsp smoked paprika
  • 2 tbsp fresh thyme
  • 2 piece skinless chicken breast fillets
  • 100 g brown basmati rice
  • 15 g creamed coconut
  • 4 piece spring onions
  • 1.5 tsp vegetable bouillon powder
  • 1 piece red pepper
  • 400 g can red kidney beans

Chicken Marinade Preparation

In a bowl, combine the lime juice, oil, allspice, ginger, garlic, paprika, and 1 tbsp thyme. Lightly flatten the chicken breasts and cut three slashes across each. Add the chicken to the bowl and mix to coat thoroughly. Set aside to marinate.

Rice and Beans Base

Add the brown basmati rice, remaining allspice, creamed coconut, 1 tbsp thyme, spring onions, and vegetable bouillon powder to the mixing bowl. Pour in 370ml boiling water, red pepper and kidney beans along with the liquid from the can.

Cooking Rice and Beans

Place the prepared rice and beans mixture into the simmering basket. Insert the simmering basket into the mixing bowl.

25 min/212°F/Speed 4 100

Cook the rice and beans for 25 min/100°C/Stufe 4. After cooking, set aside to rest for 5 mins and absorb any excess liquid.

Pan-frying the Chicken

Meanwhile, rub a non-stick frying pan with a little oil and put on a medium heat. Add the chicken and cook for 6 mins. Turn the chicken over and cook for 5-6 mins more until the chicken is browned in places and cooked all the way through. Cover and set aside to rest until the rice is ready.
