Description

This Peruvian-style marinated chicken is an explosion of flavors that will transport you directly to the Andes. The key is in the dressing, a mixture of herbs, spices and black beer that permeates every fiber of the chicken. I prepare it often for family celebrations, it is always a success! Marinating for at least 3 hours is essential for the chicken to be juicy and full of flavor. Serve this dish with crispy French fries and a fresh salad for a complete and delicious meal. Ingredients (12 ingredients)

  • 1 piece whole chicken
  • 1 cucharada sopera salt
  • 0.5 cucharada sopera ground cumin
  • 0.5 cucharada sopera dried rosemary
  • 1 cucharada sopera crushed pepper
  • 1 cup dark beer
  • 5 cucharadas soperas crushed garlics
  • 0.5 tsp ground oregano
  • 1 chorro soy sauce
  • 5 cucharadas soperas aji panca paste
  • 1 cubos butter
  • 1 piece orange

Dressing preparation

In the Thermomix glass, add ½ teaspoon of ground oregano, ½ tablespoon of ground cumin, 1 tablespoon of crushed pepper, 5 tablespoons of crushed garlics, 1 tablespoon of salt, 5 tablespoons of aji panca paste, 1 cup of dark beer and a dash of soy sauce. Mix all the ingredients well.

Chicken marinating

Bathe the whole chicken with the prepared dressing, making sure to massage it well so that it is impregnated on all sides, even under the skin. Cover the chicken and let it marinate in the refrigerator for at least 3 hours.

Preparation for baking

Preheat the oven to 190°C. After the marinating time, place cubes of butter under the chicken skin and drizzle the juice of an orange on top.

Chicken baking

Place the chicken on a baking sheet and bake for 2 hours, or until golden brown and cooked through. If necessary, you can cover the chicken with aluminum foil for the first hour to prevent it from burning.
