Description

This chicken marinated in yogurt and mango is a tasty and refreshing dish, perfect for hot summer days. The yogurt marinade makes the chicken incredibly tender and juicy, while the green chili and ginger add a spicy and fragrant touch. The mango brings an exotic sweetness that goes wonderfully with the other flavors. I often prepare this dish for barbecues or family lunches, and it is always very popular. It is easy to prepare and can be marinated in advance, making it an ideal choice for impromptu meals. Accompanied by a green salad and a few lemon slices, it's a real treat!

Ingredients (10 ingredients)

  • 2 container Yogurt
  • 4 piece Chicken breast(s)
  • 1 piece Small green chili(s)
  • 2 clove Garlic
  • 0.5 piece Lemon juice
  • 1 piece Lemon(s)
  • 2 piece Mango(es)
  • 1 c. à café Grated fresh ginger
  • 1 piece Escarole
  • Salt

Preparation of chili and garlic

Thermomix® Setting

Put 1 small deseeded green chili and 2 cloves of garlic in the Thermomix bowl and finely chop for 5 Sek./Stufe 7.

Preparation of the marinade

Thermomix® Setting
10 sec/Speed 3

Add 2 yogurts, 1 tsp of grated fresh ginger, 0.5 lemon juice and salt to the chopped chili and garlic in the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Marinating the chicken

Remove the skin from 4 chicken breasts, cut them in half, prick them on all sides with a knife and put them in a container with the prepared marinade. Mix well to coat the chicken. Leave to marinate in the refrigerator for at least 6 hours, turning the meat several times. (No Thermomix step)

Cooking the chicken

Heat a saucepan on the stove. Pour in the chicken and marinade. Cook over high heat for 5 minutes, then 10 to 12 minutes over low heat. The marinade must be completely reduced. (No Thermomix step)

Preparation of the garnish

Cut 1 washed lemon into slices. Wash and drain 1 escarole. Peel 2 mangoes and slice them. (No Thermomix step)

Plating

Arrange the chicken on plates with the salad, mango and lemon. Serve hot. (No Thermomix step)
