Description

This chicken stuffed with spinach and strawberries is an original and tasty spring recipe. The combination of spinach, ricotta and strawberries brings a touch of freshness and deliciousness to this main course. Easy to prepare with the Thermomix®, it is ideal for a sunny lunch or a Sunday brunch. The stuffing can be prepared in advance, making it a perfect dish for stress-free entertaining. Feel free to vary the seasonal vegetables for an autumn or winter version!

Ingredients (8 ingredients)

  • 4 piece Chicken breast
  • 500 g Spinach
  • 60 g Ricotta
  • 250 g Strawberry
  • 2 c. à soupe Honey
  • 1 tbsp Butter
  • to taste Salt
  • to taste Pepper

Preparation of spinach

Thermomix® Setting
2 min/212°F/Speed 1 100

Put the butter in the Thermomix bowl and melt for 2 Min./100°C/Stufe 1. Add the roughly chopped spinach and cook for 3 Min./100°C/Stufe 1. Remove from the bowl and set aside.

Preparation of the stuffing

In a bowl, mix the cooked spinach, ricotta and strawberries cut into small pieces. Add salt and pepper. Mix well.

Preparation of chicken breasts

On a board, slice the half-breasts, with a sharp knife, horizontally but without opening completely. Open flat like a wallet.

Stuffing the chicken

Place 1/4 of the stuffing on one side of each chicken breast, fold the other side over and close with a wooden skewer.

Cooking the chicken

Cook the stuffed chicken breasts in a lightly oiled pan, over medium heat, for 15 to 20 minutes, turning them regularly.

Honey glaze

Brush the chicken breasts with honey 5 minutes before the end of cooking.

Service

Serve with pasta and seasonal vegetables.
