Description

These glazed tofu meatballs are a delicious and different way to enjoy tofu. The combination of spices and the sweet and savory glaze make them irresistible. I often prepare them for dinner, accompanied by basmati rice or quinoa. They are perfect for a vegan and protein-rich meal. In addition, they can be prepared in advance and baked just before serving. A dish that always triumphs at home! Firm tofu, well drained, is the key for the meatballs to have a good consistency. Go ahead and try them, you won't regret it!

Ingredients (17 ingredients)

  • 100 g Firm tofu
  • 1 piece Onion
  • 2 clove Garlic
  • 75 g Chickpea flour
  • 45 g Breadcrumbs
  • 100 ml Soy sauce
  • Salt
  • Ground black pepper
  • 45 ml Tomato paste
  • 60 ml Extra virgin olive oil
  • 10 g Sweet paprika
  • 10 g Ground cumin
  • 10 g Garlic powder
  • 10 g Ground ginger
  • 50 g Honey
  • 40 g Ketchup
  • Sesame seeds for decoration

Preparation (7 steps)

Chop the onion and garlic

Peel and quarter the onion. Place the onion and garlic cloves in the Thermomix bowl and chop for 3 seconds at speed 5.

Prepare the meatball mixture

20 sec/Speed 6

Add the chopped firm tofu, chickpea flour, breadcrumbs, 1 tablespoon of soy sauce, salt and ground black pepper to taste to the bowl. Grind for 20 seconds at speed 6 until a homogeneous mixture is obtained. If necessary, lower the remains of the walls of the bowl with the spatula and grind for a few more seconds.

Form the meatballs

Remove the mixture from the bowl and form small portions with your hands, shaping them into meatballs. Place them on a baking sheet covered with parchment paper.

Prepare the glaze

10 sec/Speed 4

In the Thermomix bowl, add the rest of the soy sauce (approximately 90 ml), tomato paste, extra virgin olive oil, sweet paprika, ground cumin, garlic powder, ground ginger, honey and ketchup. Mix for 10 seconds at speed 4.

Glaze and bake the meatballs

Pour a small part of the glaze over the meatballs in the dish, stirring so that they are well soaked. Place the dish in the oven preheated to 200ºC with heat from above and below. Bake for 30 minutes or until golden brown.

Heat the rest of the glaze

While the meatballs are baking, heat the rest of the glaze in the Thermomix for 2 minutes at 80°C and speed 2.

Serve

Serve the meatballs hot, drizzled with the rest of the glaze and decorated with sesame seeds.
