Description

This recipe shows how to preserve potatoes by stewing them. The potatoes are peeled, cut, briefly cooked, and then stewed in jars with salt water. This recipe is ideal for stockpiling and makes it possible to prepare fried potatoes or hash browns at any time. The preparation time is about 3 hours, the working time about 45 minutes.

  • 1 TL Salt
  • 1 l Water

Prepare potatoes

Peel and wash firm cooking potatoes. Remove any bad spots. Cut the potatoes to the desired size and wash again in cold water.

Precook potatoes

Bring water to a boil. Add the cut potatoes in batches to the mixing bowl for 2 minutes and cook for 2 Min./100°C/level 1. Then remove the potatoes.

Sterilize jars

While the potatoes are cooking, sterilize the jars in the oven.

Fill jars

Fill the precooked potatoes into the sterilized jars. Leave 2-3 cm space to the rim.

Fill jars

Mix cold water with 1 teaspoon of salt per 1 liter of water and fill the jars with it.

Stew

Let the filled jars stew at 100 degrees for 120 minutes in the stewing machine.
