Description

Poppy plaits from Tanja Pensel, delicious and easy to make.

Ingredients (14 ingredients)

  • 100 g Wheat flour 550
  • 100 g Water
  • 1 g Yeast fresh
  • 75 g Milk
  • 70 g Water
  • 10 g Yeast fresh
  • 325 g Wheat flour 550
  • 0.5 g Spelt flour 630
  • 5 g Baking malt
  • 1 TL Sugar
  • 10 g Honey
  • 10 g Beet syrup
  • 20 g Butter
  • 10 g Salt

Preparation (7 steps)

Prepare pre-dough

Thermomix® Setting

Put 100 g wheat flour 550, 100 g water and 1 g yeast fresh into the mixing bowl and mix for 20 sec./speed 3. Let stand at room temperature for 8 to 12 hours.

Prepare main dough

Thermomix® Setting
6 min/Kneading speed

Put 75 g milk, 70 g water, 10 g yeast fresh and the pre-dough into the mixing bowl. Add 325 g wheat flour 550 or half of it spelt flour 630, 5 g baking malt and 1 tsp sugar or alternatively 10 g honey or beet syrup. Add 20 g butter or margarine and 10 g salt. Knead everything except butter and salt for 6 min./kneading level.

Knead in butter and salt

Add the butter and finally the salt and knead for 2 min./kneading level. The dough should be smooth, but not too soft.

Let the dough rest

Let the dough rest at room temperature for 30 minutes.

Form dough pieces

Weigh the dough pieces, round them off and let them rest for another 10 minutes. Then roll into strands, then form plaits.

Prepare plaits

Spray the formed plaits with water, dip in poppy seeds, place on a baking sheet and cover and let rise for about 35 to 45 minutes (depending on room temperature).

Baking

Spray the plaits again and bake in a preheated oven at 200°C circulating air for 16-18 minutes with steam.
