Description

This pork loin roast in Madeira sauce is a hearty main course, ideal for festive occasions. The meat is braised in a rich sauce made from Madeira, vegetables and herbs. Preparation in the Thermomix® takes about 90 minutes and yields 6 servings. Perfect for a hearty lunch or dinner.

  • 1000 g Pork loin roast
  • 2 Zwiebeln Onions
  • 100 g Celery
  • 2 Karotten Carrots
  • 2 EL Tomato paste
  • 1 TL Mustard
  • 1 Zweig Rosemary
  • 1 Zweig Thyme
  • 100 ml Madeira
  • 500 ml Broth
  • 200 ml Cream
  • 2 EL Oil
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (10 steps)

Preparation of the Meat

Season the pork loin roast with salt and pepper. Sear the meat in a separate pan on all sides and then set aside.

Prepare vegetables

Peel and quarter the onions. Clean the celery and roughly dice. Peel the carrots and cut into slices.

Chop vegetables

Add the carrot slices, tomato paste, mustard, rosemary and thyme to the mixing bowl and mix for 5 sec./level 4.

Add the Madeira and broth to the mixing bowl and bring to a boil for 5 min./100°C/level 1.

Add meat and braise

Place the seared pork loin roast in the mixing bowl. Attach the measuring cup and simmer for 60 min./100°C/Reverse Rotation level 1.

Puree sauce

Remove the roast from the mixing bowl and keep warm. Puree the sauce in the mixing bowl for 30 sec./level 8-10. Hold the lid firmly in place.

Add the cream to the mixing bowl and stir in for 3 min./90°C/level 2.

Season the sauce with salt and pepper. Cut the pork loin roast into slices and serve with the sauce.
