Description

This baked blueberry porridge from the Thermomix® is a delicious breakfast or dessert with oat flakes, banana and blueberries. Refined with nut butter and nuts or seeds, it is vegan and vegetarian. Preparation takes about 50 minutes, of which 20 minutes are active working time. The recipe is ideal for a healthy diet and yields 4 servings. Suitable for light cuisine and as a family meal.

  • 50 g Banana
  • 50 g Oat flakes
  • Salt
  • 80 ml Plant-based drink
  • 80 g Blueberries
  • 15 g Ground nuts or seeds
  • 1 TL Coconut oil
  • Nut butter

Preparation (9 steps)

Preheat oven and melt coconut oil

Preheat the oven to 180 degrees top / bottom heat. Place the glass of coconut oil in the oven to melt.

Prepare banana

Put 50g of banana in a bowl and mash with a fork. Set aside 10g of the mashed banana for the crumble and place in a separate bowl.

Prepare porridge base

Put the remaining 40g mashed banana, 50g oat flakes, a pinch of salt and 80ml plant-based drink into the mixing bowl.

Pour porridge base into dish

Pour the porridge base into an ovenproof dish.

Spread blueberries

Spread 80g blueberries on the porridge base so that the entire surface is covered as much as possible.

Prepare crumble

Thermomix® Setting

Put 15g ground nuts or seeds, the remaining 50g oat flakes, the 10g mashed banana, a pinch of salt and 1 tsp melted coconut oil into the mixing bowl.

Spread crumble on the porridge

Crumble the crumble dough with your fingers over the blueberries.

Bake porridge

Place the dish in the preheated oven for 20-30 minutes. The porridge is ready when the crumble is lightly browned.

Serve

Optional: Drizzle with some nut butter and serve.
