Description

Potato dumplings with plum filling are easy and quick to make with the Thermomix®. This vegetarian dish combines potatoes, flour and semolina to create a classic dough, which is filled with juicy plums. The preparation time is about 60 minutes for 12 servings. Ideal as a sweet main course or dessert for the whole family.

Ingredients (13 ingredients)

  • 600 g Potatoes, floury
  • 120 g Wheat flour Type 405
  • 60 g Soft wheat semolina
  • 40 g Soft butter
  • 12 Stück Pitted plums, medium-sized and ripe
  • 12 Stücke Cube sugar
  • 1 Stück Egg size M
  • 0.5 Stück Lemon, untreated (zest)
  • 0.5 TL Salt
  • 80 g Butter
  • 120 g Breadcrumbs
  • 1 Prise Cinnamon (optional)
  • Powdered sugar

Preparation (9 steps)

Cook the potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Wash 600 g potatoes (floury, ideally the same size and not too large) and place them with the skin in the simmering basket. Fill 500 ml of water into the mixing bowl, add 1/2 tsp of salt and insert the simmering basket. Cook for 25 min./Varoma/speed 1. Remove the simmering basket and let the potatoes steam off well.

Prepare the plums

While the potatoes are cooking, wash 12 plums, pat them dry, remove the stems and cut them halfway from top to bottom. Remove the pit and fill each opening with a cube of sugar.

Prepare the potato dough

Peel the slightly cooled potatoes and press them through the potato ricer into a bowl. Add 40 g soft butter, 60 g soft wheat semolina, 1 pinch of salt, the grated zest of ½ lemon and 1 egg to the mixing bowl. Mix for 20 sec./speed 4.

Add flour

Thermomix® Setting
2 min/Kneading speed

Add 120 g flour type 405 and knead for 2 min./knead setting to a smooth dough.

Shape the dumplings

Form the dough into a thick roll and divide it into 12 portions of approx. 50 g each. Press the dough pieces into small patties. Place 1 filled plum in each piece of dough patty, wrap it and form it into a round dumpling. Make sure that the dumplings are well closed.

Cook the dumplings

Thermomix® Setting
10 min/212°F/Gentle stir speed 100

Bring enough water to a boil in a large pot and add 1 pinch of salt. Carefully slide the 12 dumplings into the boiling water with a slotted spoon. Reduce the heat and let the plum dumplings simmer for 10 min./100°C/speed soft stirring. They are done when they float on the surface. Remove with a slotted spoon and drain well.

Prepare the breadcrumbs

5 min/248°F/Speed 2 120

Put 80 g of butter into the mixing bowl and melt for 3 min./50°C/speed 1. Add 120 g of breadcrumbs and 1 pinch of cinnamon (optional) and stir in for 5 min./120°C/speed 2.

Roll the dumplings in breadcrumbs

Roll the dumplings in the breadcrumbs until they are covered all around.

Serve

Serve the plum dumplings with plum compote and / or vanilla sauce and sprinkle with powdered sugar as desired.
