Description

Potato wrap with roasted breadcrumbs are a hearty and vegetarian side dish from the Thermomix®. The main ingredients are floury potatoes, eggs, flour, butter and breadcrumbs. Preparation (7 steps)

Cook potatoes

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Wash 1 kg floury potatoes and place in the simmering basket. Fill 1 liter of water into the mixing bowl, insert the simmering basket and cook for 30 min./Varoma/speed 1.

Peel and press potatoes

After cooking, carefully remove the potatoes from the simmering basket, peel and press through a potato press. Place the pressed potatoes in a bowl and let cool.

Prepare dough

Add 2 eggs (size M), 180 g wheat flour type 405, salt, pepper and 1 pinch of grated nutmeg to the cooled potatoes. Knead everything with your hands to form a dough.

Roast breadcrumbs

Thermomix® Setting

Put 2 tablespoons of butter in the mixing bowl and melt for 3 min./50°C/speed 1. Add 150 g breadcrumbs and roast for 5 min./120°C/speed 1 while stirring occasionally with the spatula.

Shape dumpling roll

Spread a damp kitchen towel on the work surface. Spread the dough on it to form a rectangle about 1 cm thick, leaving 10 cm space at the short ends. Spread the roasted breadcrumbs evenly on the potato dough. Using the towel, roll up the rectangle from the long side. Wrap the kitchen towel tightly around the roll and tie the ends with kitchen twine.

Cook dumpling roll

30 min/212°F/Gentle stir speed 100

Put 1.5 liters of salted water in the mixing bowl and bring to the boil for 10 min./100°C/speed 1. Carefully place the dumpling roll in the mixing bowl and cook for 30 min./100°C/gentle stir setting. The roll must be completely covered with water, add more water if necessary.

Cut and serve dumpling roll

After cooking, carefully remove the dumpling roll from the mixing bowl, unwrap it from the cloth and cut into slices. The wrap dumplings taste as a side dish to roasts, goulash or mushroom ragout or simply crispy fried in butter from the pan.

About this recipe

Potato wrap with roasted breadcrumbs – a dish that has tradition in our home. My grandma always made it for Christmas, as a side dish to roast goose. The roasted breadcrumbs gave the whole thing a special touch, almost nutty, and the potato wraps were always the highlight of the meal. I have refined the recipe over the years and adapted it to the Thermomix® to simplify preparation without losing the original taste. The choice of the right potatoes is crucial for the success of the recipe. Floury potatoes are a must here, as they break open when cooked and develop a loose, almost fluffy consistency. This consistency is important so that the dough holds together well later and does not become too sticky. The eggs additionally bind the dough and provide a beautiful color. The flour, preferably type 405, gives the whole thing structure. Nutmeg is the secret spice that wonderfully complements the potato taste and adds a warm, spicy note. The roasted breadcrumbs are the icing on the cake. They provide a crispy contrast to the soft potato mass and give the dish a slightly nutty note. The butter is not only a flavor carrier here, but also ensures that the breadcrumbs become nice and golden brown and crispy. When preparing the dough in the Thermomix®, it is important that the potatoes have cooled down well before the remaining ingredients are added. Otherwise, the eggs may curdle and the dough will become too liquid. Roasting the breadcrumbs in the Thermomix® is very easy. Make sure to move the breadcrumbs again and again with the spatula during roasting so that they brown evenly and do not burn. When forming the roll, the damp kitchen towel is essential. It prevents the dough from sticking to the work surface and makes rolling up much easier. Make sure to wrap the roll tightly and seal the ends well so that no water can penetrate. For a vegetarian version, you can simply leave the potato wraps as they are. If you like it vegan, you can replace the eggs with an egg substitute (e.g. apple sauce or flaxseed egg) and use margarine or vegetable oil instead of butter for roasting the breadcrumbs. There are no limits to the imagination when it comes to spices. A little garlic powder, paprika powder or fresh herbs such as parsley or chives go perfectly with the potato wraps. Serve the potato wraps as a side dish to roasts, goulash or mushroom ragout. But they also taste pure, with a little melted butter and fresh herbs. If you like it heartier, you can cut the potato wraps into slices after cooking and fry them in butter until golden brown. A fresh salad goes well with this. The potato wraps can be prepared well in advance. The uncooked roll can be stored in the refrigerator and cooked the next day. Cooked potato wraps can also be stored in the refrigerator and fried in the pan or warmed up in the microwave before serving.
