Description

This dish is an absolute favorite when you need something quick, but still want something special on the table. The tender chicken harmonizes wonderfully with the sour note of Granny Smith apples and the creamy coconut milk curry. I have been making it for years and it is always well received. The preparation is super easy and does not take long. Perfect for a cozy evening with friends or family. If you don't like it so spicy, you can of course use less curry. A dash of lemon juice at the end brings an extra freshness.

Ingredients (10 ingredients)

  • 500 g Chicken breast
  • 1 piece Granny Smith apples
  • 1 piece Onion
  • 2 tbsp Re-milled durum wheat flour
  • 400 ml Coconut milk
  • 1 tsp Ginger powder
  • 2 tbsp Curry
  • 2 tbsp Extra virgin olive oil (EVO)
  • 1 pinch Salt
  • 1 bunch Parsley

Preparation (10 steps)

Prepare chicken

The chicken breast is stripped of the central bone and cut into small pieces. Salt the pieces and massage with your hands to distribute the salt well.

Flour chicken

Put the chicken pieces in a colander, place it over a large container, add the flour and shake the colander to remove excess flour.

Prepare apple

Wash the apple, remove the core and cut it into small cubes.

Chop onion

1 onion in the bowl and chop for 3 Sec./speed 5.

Sauté onion

Thermomix® Setting

Add 2 tablespoons of extra virgin olive oil and cook for 3 Min./120°C/speed 1.

Brown chicken

In a pan, brown the floured chicken pieces with the wilted onion, stirring often.

Add apple, ginger and coconut milk

Add the apple cubes, cook for another minute and season with 1 teaspoon of ginger powder and 400 ml of coconut milk.

Add curry and cook

Pour 2 tablespoons of curry over the chicken and mix it into the sauce. Cover the pan with its lid, lower the heat and let it cook for another 10 Min.

Thicken sauce

Remove the lid, let the sauce thicken for another minute.

Serve

Complete with a handful of freshly chopped parsley and serve.
