Ingredients (10 ingredients)

  • 0.75 cup chicken broth
  • 1.5 tablespoons tomato paste
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon dried oregano
  • 0.125 teaspoon salt
  • 1 clove garlic, minced
  • 4 piece boneless, skinless chicken breast halves
  • 3 tablespoons dry bread crumbs
  • 2 teaspoons olive oil
  • 2 cups fresh sliced mushrooms

Prepare the broth mixture

Add ¾ cup chicken broth, 1 ½ tablespoons tomato paste, ¼ teaspoon ground black pepper, ½ teaspoon dried oregano, ⅛ teaspoon salt, and 1 clove garlic to the mixing bowl. Mix well for 10 Sec./Stufe 3.

Set aside the broth mixture

Pour the broth mixture from the mixing bowl into a separate bowl and set aside.

Prepare the chicken

Dredge the 4 boneless, skinless chicken breast halves in 3 tablespoons dry bread crumbs, coating well. Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Sauté the chicken in the oil for 2 minutes per side, or until lightly browned. Remove the chicken from the skillet and set aside.

Add broth and mushrooms

Add the reserved broth mixture and 2 cups fresh sliced mushrooms to the skillet. Bring to a boil, then cover, reduce heat to low, and simmer for 20 minutes.

Remove chicken and reduce sauce

Remove the chicken from the skillet and set aside, covering to keep it warm. Bring the broth mixture to a boil and cook for 4 minutes, or until reduced to desired thickness.
