Description

This broaster chicken with rice is a classic Peruvian dish that always triumphs. The key is in the marinade of the chicken, which gives it an incredibly tasty and juicy flavor. The combination of spices and the touch of mustard make each bite an explosion of flavor. Served with white rice and a fresh salad, it is a complete and delicious meal. Ingredients (25 ingredients)

  • 4 piece pieces of chicken with joint
  • 4 cucharadas soperas mustard
  • 2 dientes garlic
  • 1 chorro soy sauce
  • 1 chorro milk (optional)
  • 1 chorro vinegar
  • 0.5 tsp ground dried oregano
  • 0.5 tsp ground black pepper
  • 1 tsp grated ginger
  • 1 piece egg
  • 250 gramos corn flour
  • 100 gramos cornstarch or chuño
  • salt
  • oil
  • 1 cup white rice
  • 360 mililitros water
  • salt
  • 1 piece lettuce
  • 3 piece avocados
  • 2 piece carrots
  • 1 piece cucumber
  • 2 piece tomatoes
  • pickled radishes in slices
  • 5 piece white or yellow potatoes
  • salt

Preparation (8 steps)

Preparation of ground garlic

Peel and place 2 cloves of garlic in the glass. Crush for 3 seconds at speed 7. Remove and reserve.

Chicken marinade

In a large bowl, mix 4 tablespoons of mustard, the reserved ground garlic, a splash of soy sauce, a splash of milk (optional), a splash of vinegar, ½ teaspoon of ground dried oregano, ½ teaspoon of ground black pepper, 1 teaspoon of grated ginger, 1 egg and salt to taste. Mix well and marinate the chicken pieces for at least 2 hours or preferably overnight.

Preparation of the batter

In a wide tray, mix 250 grams of corn flour and 100 grams of cornstarch or chuño. Coat the marinated chicken pieces in this mixture, making sure they are well covered.

Rice preparation

Place 1 teaspoon of reserved ground garlic and a splash of oil in the glass. Sauté for 3 minutes at 120°C at speed 1.

Rice cooking

Add 1 cup of previously washed white rice to the glass. Stir for 1 minute at 100°C at speed 1. Then, add 1½ cups of water (360 milliliters) and salt to taste. Cook for 20 minutes at 100°C at speed 1.

Completion of rice cooking

Check that the rice is cooked and separated. If necessary, cook for a few additional minutes. Remove the rice from the glass and reserve.

Salad preparation

Wash and cut 1 lettuce, 3 avocados, 2 carrots, 1 cucumber and 2 tomatoes. Mix all the ingredients in a bowl with pickled radishes in slices. Reserve.

Preparation of french fries

Cut 5 white or yellow potatoes into sticks. Fry in abundant oil until golden brown. Remove and place on absorbent paper. Season with salt to taste.
