Description

This chicken in casserole, topped with a crispy coconut crumble, is a comforting and tasty dish. I love preparing this recipe, especially when the temperatures start to drop. The chicken, simmered in a coconut milk flavored with tomatoes, apples and onions, becomes incredibly tender. The crumble brings a gourmet and original touch. It is a perfect dish for a friendly dinner with family or friends. Do not hesitate to add a pinch of chili to enhance the taste!

Ingredients (14 ingredients)

  • 800 c. à soupe Chicken breast(s)
  • 4 piece Tomato(es)
  • 2 piece Apple(s)
  • 1 piece Onion(s)
  • 20 cl Coconut milk
  • 1 piece Bulgarian yogurt(s)
  • 3 c. à soupe Grated coconut(s)
  • 1 c. à soupe Poultry
  • 3 c. à soupe Oil
  • Salt
  • 100 g Flour
  • 120 g Butter
  • 2 c. à soupe Grated coconut(s)
  • 2 c. à soupe Almond powder

Preparation (12 steps)

Preheat the oven

Preheat the oven to 180°C (th.6).

Preparing the vegetables and chicken

Cut the chicken breasts into cubes. Scald and seed the tomatoes. Cut them into dice and do the same with the apples. Peel and slice the onion.

Chop the onion

Thermomix® Setting

Put the sliced onion in the Thermomix bowl and chop for 3 Sek./Stufe 5.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the oil to the Thermomix bowl and sauté the onion for 3 Min./120°C/Stufe 1.

Brown the chicken

In a pan, brown the chicken cubes for 3-4 minutes, stirring regularly.

Add the vegetables

Add the diced tomatoes and apples to the pan with the chicken, mix for 2 minutes.

Season and cook

Sprinkle with poultry stock, 1 tbsp of grated coconut and salt. Continue cooking for 2 minutes over medium heat.

Cooking in coconut milk

Pour the coconut milk into the pan and cook covered for about 20 minutes over low heat.

Add the yogurt

Pour the beaten yogurt into the pan 5 minutes before the end of cooking.

Prepare the crumble dough

Thermomix® Setting
5 sec/Speed 4

Meanwhile, in the Thermomix bowl, mix the flour, almond powder and grated coconut for 5 Sek./Stufe 4.

Add the butter

Thermomix® Setting
20 sec/Speed 4, Linkslauf Reverse

Add the butter cut into small dice in the Thermomix bowl and mix for 20 Sek./Stufe 4, Linkslauf, until a fine and sandy texture is obtained. Set aside.

Assembly and cooking

Oil 6 mini casseroles. Pour in the chicken preparation. Cover with the crumble dough and bake in the oven for 15 minutes.
