Chicken in caramelized onion sauce

Ingredients (14 ingredients)

  • 550 g Chicken breast fillet
  • 2 tbsp Oil
  • 1 tbsp Butter
  • 4 piece Onions
  • 1 clove Garlic
  • 1 tbsp Flour
  • 250 ml Chicken broth
  • 200 ml Cream
  • 0.5 tsp Brown sugar
  • 0.5 tsp Paprika powder
  • 0.5 tsp Dried thyme
  • Salt
  • Pepper
  • Fresh parsley, chopped

Preparation (11 steps)

Prepare chicken

Halve the chicken breast fillet (or boneless chicken thighs) lengthwise so that it is not too thick. Rub with oil, salt and pepper. Sear sharply on both sides in a hot pan.

Chop onions

Put 4 onions in the mixing bowl and chop.

Prepare caramelizing

Add 1 tbsp butter and 1 tsp brown sugar to the onions in the mixing bowl.

Caramelize onions (step 1)

Caramelize onions, butter and sugar for 5 min. / 120°C / level 1 / reverse & searing mode.

Caramelize onions (step 2)

Then caramelize for 10 minutes in searing mode on “light” until the onions are nice and soft and golden brown.

Sauté flour

Add 1 tbsp flour to the caramelized onions and sauté.

Finish sauce

Add 250 ml chicken broth, 200 ml cream, ½ tsp paprika powder, ½ tsp dried thyme, salt and pepper to taste.

Thicken sauce

Cook the sauce for 5-7 min. / 100°C / reverse / level 1 until it thickens creamy.

Stir in parsley

Add fresh parsley, chopped, and stir in.

Baking

Pour the sauce over the seared chicken in the casserole dish. Bake in a preheated oven at 190°C top/bottom heat for about 20 minutes.
