Description

This dish of poultry stuffed with couscous and sultanas is a real delight for the taste buds. I often prepare it for the end-of-year celebrations, as it is both festive and comforting. The couscous, flavored with cinnamon and spices, brings an oriental touch that goes wonderfully with the poultry. The sweetness of the sultanas contrasts nicely with the spicy side of the dish. It is a dish that can be prepared in advance and that warms hearts in winter. A real treat for lovers of sweet and savory flavors! Feel free to vary the spices according to your tastes.

Ingredients (12 ingredients)

  • 1 pinch cinnamon
  • 1 pinch salt or fine salt
  • 1 cuillère sugar
  • 1 tbsp Sultana
  • 1 tbsp Couscous
  • 1 piece Chicken
  • 1 tbsp Ginger
  • 1 tbsp Saffron powder
  • 1 tbsp Salt or fine salt
  • 1 tbsp Pepper
  • 1 piece Onion
  • 1 tbsp Oil

Preparation (8 steps)

Couscous prepare and mix

The couscous must be cooked according to the instructions on the package. Once cooked, put it in a salad bowl. Add a handful of sultanas, a spoon of sugar, a pinch of salt and a pinch of cinnamon. Mix everything well. Set aside.

Poultry stuffing

Stuff the poultry with the mixture of couscous and sultanas. Close the poultry well with kitchen twine or toothpicks to prevent the stuffing from escaping during cooking.

Onion chopping

Peel and cut the onion into four. Put the onion in the Thermomix bowl and chop for 3 Sek./Stufe 5.

Onion sautéing

Add a little oil to the Thermomix bowl with the chopped onion. Sauté for 3 Min./120°C/Stufe 1.

Spices adding

Add salt, pepper, ginger and saffron powder to the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Poultry cooking

In a casserole dish, place the stuffed poultry. Pour the contents of the Thermomix bowl over the poultry. Add a glass of water. Cook over low heat for about 1 hour 30 minutes, or until the poultry is cooked.

Poultry browning

Once the poultry is cooked, place it in an oven dish. Brown in the preheated oven at 200°C for about 15 minutes, or until golden brown.

Sauce reducing

While the poultry is browning in the oven, reduce the cooking sauce in a saucepan over low heat, until the desired consistency is obtained.
