Description

This green chicken pozole with tender corn is a comforting and flavorful recipe, perfect for cool days. The combination of shredded chicken, pozole corn, and corn on the cob gives it an incredible texture, while the green sauce, made with chiles, cilantro, and green tomato, adds a spicy and fresh touch. Ingredients (11 ingredients)

  • 400 gramos Pozole corn
  • 1 piece Chicken breast
  • 2 dientes Garlic
  • 6 piezas Green tomato
  • 1 pieza Serrano chili
  • 1 cup Cilantro
  • 1 pieza Poblano chili
  • 0.25 pieza White onion
  • 0.25 cucharadita Cumin
  • 0.25 cucharadita Oregano
  • 4 piezas Corn on the cob in pieces

Preparation (7 steps)

Wash the pozole corn

Place 400 grams of pozole corn in the simmering basket and wash under the stream of cold water until the water comes out clear.

Cook the pozole corn

Thermomix® Setting
50 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Pour the washed pozole corn into the bowl. Add water to cover and a pinch of salt. Program 50 Min./100°C/Reverse spin/Spoon speed. Check that the corn is tender, if not, program 10-20 more minutes.

Cook the chicken and the corn on the cob

Thermomix® Setting
30 min/Varoma/Velocidad 1 Varoma

Place 1 chicken breast and 4 pieces of corn on the cob in pieces in the Varoma. Pour 1 liter of water into the bowl, add a pinch of salt and ¼ piece of white onion. Place the Varoma in its position and program 30 Min./Varoma/Speed 1.

Prepare the green sauce

While the chicken is cooking, place in the bowl 6 pieces of green tomato, 1 piece of serrano chili, 1 cup of cilantro, 1 piece of poblano chili, 2 cloves of garlic, ¼ teaspoon of cumin, ¼ teaspoon of oregano, a pinch of salt and pepper. Crush 30 Sec./Speed 10.

Cook the green sauce

Thermomix® Setting
10 min/248°F/Velocidad 2 120

Pour the green sauce in the bowl and program 10 Min./120°C/Speed 2.

Shred the chicken

Remove the chicken from the Varoma and shred it. Reserve the Varoma broth.

Combine the ingredients

20 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Remove the pozole corn from the bowl and reserve. Pour the Varoma broth in the bowl. Add the cooked pozole corn, the shredded chicken and the green sauce. Program 20 Min./100°C/Reverse spin/Spoon speed.
