Description

These puff pastry pockets with vanilla pudding and crunchy crumble are a real treat! I especially like to make them when I'm expecting visitors because they are easy to prepare and taste good both warm and cold. The homemade vanilla pudding, refined with cranberries and almonds, makes these small cakes something special. The combination of the buttery puff pastry, the creamy filling and the sweet crumble is simply irresistible. Perfect for a cozy afternoon or as a sweet surprise for brunch!

Ingredients (12 ingredients)

  • 1 Pck. Pudding powder (vanilla)
  • 500 ml Milk (3.8% fat)
  • 200 g Sugar
  • 1 piece Organic Lemon
  • 300 g Wheat Flour Type 405
  • 150 g Butter
  • 1 tsp Bourbon Vanilla Sugar
  • 100 g Cranberries (dried)
  • 50 g Almonds (chopped)
  • 1 Blätter Puff pastry (refrigerated section)
  • 1 piece Egg (size M)
  • 200 g Powdered sugar

Preparation (13 steps)

Mix pudding powder

Mix 1 pack of pudding powder with 100 ml milk and 50 g sugar in a bowl and set aside.

Boil milk

Thermomix® Setting
5 min/212°F/Speed 1 100

Put 400 ml milk into the mixing bowl and bring to the boil for 5 Min./100°C/speed 1.

Cook pudding

Thermomix® Setting
10 sec/Speed 3

Add the mixed pudding powder and stir in for 10 sec/speed 3. Then cook for 8 Min./100°C/speed 2.

Finish and cool pudding

Thermomix® Setting

Pour the vanilla pudding into a bowl, cover with cling film directly on the surface and chill in the refrigerator.

Make lemon zest

Wash the lemon, dry well and grate the peel. Set aside 1 tsp lemon zest. Squeeze out the juice and set aside.

Prepare crumble

Thermomix® Setting
20 sec/Speed 4

Put 300 g wheat flour, lemon zest, 150 g butter, 150 g sugar, 1 tsp vanilla sugar and 1 pinch of salt into the mixing bowl and process into crumble for 20 sec/speed 4. Transfer to a bowl and chill.

Prepare apple

Wash, peel, quarter the apple, remove the core and cut into small cubes.

Refine pudding

Stir the cold vanilla pudding vigorously. Fold in the cranberries, apple cubes and almonds.

Cover puff pastry

Roll out the puff pastry and cut into 8 rectangles. Spread the pudding evenly in the middle of the rectangles and brush the edges with cold water. Fold one side over the pudding and press the edges firmly. Place the puff pastry pieces on a baking sheet lined with baking paper and prick with a fork.

Brush puff pastry and top with crumble

Whisk the egg and brush the puff pastry pieces with it. Take the crumble from the refrigerator and spread it densely on the puff pastry pieces.

Bake crumble cakes

Bake the crumble cakes in a preheated oven on the middle rack for about 20 minutes. Then let them cool down on cake racks.

Prepare glaze

Mix the lemon juice with powdered sugar in a bowl to make a glaze.

Glaze crumble cakes

After the crumble cakes have cooled, sprinkle them with the glaze. Let it set and enjoy.
