Description

This recipe for Pupusas from El Salvador is a delicious and filling main course. The kidney bean and mushroom filling is seasoned with cumin and paprika. The dough is made with corn flour and wheat flour, and the pupusas are fried in a pan until golden brown. Served with Salsa Roja and white cabbage (Curtido) they are a real treat.

Ingredients (14 ingredients)

  • 0.5 Stück Onion
  • 2 Stück Garlic cloves
  • 80 g Kidney beans
  • 100 g Mushrooms (canned)
  • nach Geschmack Cumin, ground
  • nach Geschmack Paprika powder
  • nach Geschmack Salt
  • 100 g White cabbage
  • Vinegar
  • nach Geschmack Salt
  • 120 g Corn flour
  • 60 g Wheat flour
  • 150 ml Water
  • 0.25 TL Salt

Preparation (8 steps)

Prepare onion, garlic and kidney beans

Place 1/2 onion and 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 5. Sauté with some oil in a frying pan over medium heat together with 80g kidney beans for 2-3 minutes. Then put in the mixer and mix into a paste.

Prepare mushroom filling

Cut 100g mushrooms (canned) into small pieces and add to the kidney bean paste. Season the filling strongly with cumin, paprika and salt.

Prepare white cabbage

Cut or grate 100g white cabbage as finely as possible, pour hot water over it in a bowl and set aside.

Prepare dough

Thermomix® Setting

Put 120g corn flour, 60g wheat flour, 150ml water and 1/4 tsp salt in the mixing bowl. Insert Patix dough knife and mix for 2 min./kneading stage to form a dough (consistency of modeling clay).

Shape and fill pupusas

Form 6-8 balls from the dough. Take 1 dough ball in your hand and press in the middle. Then place 1 tbsp of bean-mushroom filling in the hollow and close the dough all around. Once the pupusa is closed, flatten it with the palm of your hand. Continue with the remaining dough balls.

Fry pupusas

Fry the pupusas in a frying pan over medium heat with some vegetable oil on both sides until golden yellow.

Prepare white cabbage

Pour the water off the white cabbage and rinse it with cold water. Dry it a little and then pour the vinegar over it in a bowl and knead briefly with your hands. Season with salt.

Serve

Serve the pupusas with Salsa Roja and the white cabbage (Curtido)!
