The sweetness of the peas is perfectly balanced by the richness of the cream and the refreshing touch of mint. It's ready in minutes, making it perfect for a quick lunch, a light dinner, or as a side to grilled fish or chicken. This purée is also a great way to sneak in some extra greens for the kids. Feel free to add a squeeze of lemon juice for an extra zing!

400 g frozen peas
4 tbsp double cream
1 small handful mint leaves
1 pinch salt
1 crack black pepper

Purée the ingredients

30 sec/Speed 10

Place 400g frozen peas, 4 tbsp double cream, a small handful of mint leaves, a pinch of salt, and a crack of black pepper into the Thermomix bowl. Blend for 30 sec./Stufe 10 until smooth. If a smoother consistency is desired, strain the purée through a sieve after blending.
