Description

These purple potato chips are a colorful and crunchy snack, perfect for parties or as a side dish. Preparation with the Thermomix® is quick and easy. The recipe is vegan and gluten-free and offers an interesting alternative to traditional potato chips. The chips are ready to be enjoyed in about 30 minutes.

Ingredients (3 ingredients)

  • 1 kg Potatoes with blue-purple flesh (e.g. Blauer Schwede)
  • 1.5 Liter Oil, highly heatable, neutral-tasting or 1.5 kg of fat for frying
  • Salt

Prepare potatoes

Peel the purple potatoes and cut into very thin slices. This can be done with a vegetable slicer or the Thermomix®. If using the Thermomix®, place the potato slices in the mixing bowl in batches and chop for 3 sec/speed 4. The slices should be evenly thin.

Prepare oil

Heat the highly heatable oil or fat in a pot or deep fryer to 170-180°C. The temperature should be kept constant for optimal results.

Fry potato chips

Add the potato slices to the hot oil in batches and fry until golden brown. This usually takes 2-3 minutes per serving. The chips should not overlap to ensure even frying.

Drain and season

Remove the fried potato chips from the oil with a slotted spoon and drain on kitchen paper to remove excess fat. Then season the chips with salt and serve immediately.
