Description

This creamy chicken with corn and bacon is a dish I often prepare at home. It is very easy to make and everyone always likes it, even the little ones! The combination of tender chicken with creamy corn and a crispy touch of bacon is simply delicious. Ideal for a quick weekday meal or to surprise your guests at an informal dinner. You can accompany it with white rice or a fresh salad. A complete dish full of flavour!

Ingredients (6 ingredients)

  • 2 piece Chicken cutlets
  • 1 piece Red pepper
  • 1 piece Onion
  • 1 pack Bacon
  • 1 can Cream
  • 1 lámina Creamed corn

Preparation of the ingredients

Cut the chicken cutlets into strips or small cubes. Chop the red pepper and onion into small pieces. Cut the bacon into cubes. Reserve all ingredients separately.

Sauté onion and pepper

5 min/248°F/Speed 1 120

Place the chopped onion and red pepper in the Thermomix bowl. Program 3 seconds/speed 5 to chop finely. Then, add a little oil and sauté for 5 minutes/120°C/speed 1.

Cook the bacon

Thermomix® Setting
6 min/Varoma/Speed 1 Varoma

Remove the onion and pepper mixture from the bowl and reserve. Place the cubed bacon in the Thermomix bowl. Program 6 minutes/Varoma/speed 1, without placing the measuring cup, so that the bacon browns and becomes crispy. Remove the bacon from the bowl and reserve, keeping the fat that has been released.

Brown the chicken

In a separate frying pan, using the reserved bacon fat, brown the chicken strips or cubes over medium-high heat. Season the chicken to taste with salt, pepper and desired spices. Cook until golden brown on all sides.

Mix and cook

Thermomix® Setting
5 min/194°F/Speed 1 90 Reverse

Add the browned chicken, crispy bacon, onion and pepper mixture, and the can of creamed corn to the Thermomix bowl. Mix well with the spatula. Program 5 minutes/90°C/speed 1/Reverse rotation.

Add the cream

Thermomix® Setting
2 min/176°F/Speed 1 80 Reverse

Add the cream to the Thermomix bowl. Program 2 minutes/80°C/speed 1/Reverse rotation. Do not let the cream boil.

Serve

Serve the creamy chicken with corn and hot bacon. Accompany with white rice or a salad.
