Description

This Thermomix® recipe for Quarkkeulchen is a quick and inexpensive dessert that is suitable as both a dessert and for breakfast. The main ingredients are potatoes, quark, flour and raisins. Preparation with the Thermomix® takes about 25 minutes and yields 4 servings. Ideal for light cooking or as a sweet treat for the whole family. The recipe is vegetarian.

Ingredients (12 ingredients)

  • 600 g Floury potatoes
  • 250 g Quark
  • 80 g Flour (Type 405)
  • 30 g Raisins
  • 60 g Brown sugar
  • 0.5 TL Lemon zest
  • 1 Prise Salt
  • 1 Stück Egg yolk, size M
  • 2 EL Clarified butter
  • Powdered sugar
  • Applesauce
  • Marillenröster (Apricot compote)

Preparation (5 steps)

Prepare potatoes

Peel 600 g floury potatoes and cook in salted water in a separate pot until tender. Press the cooked potatoes, cold, warm or lukewarm, through a potato ricer into a mixing bowl. Tip: You can also use potatoes from the day before or prepare them the day before.

Prepare the dough

In the mixing bowl, mix the pressed potatoes with 250 g quark, 80 g flour, 30 g raisins (optional), 60 g brown sugar, ½ tsp lemon zest, 1 pinch of salt and 1 egg yolk with a wooden spoon. The dough should not be too sticky. If necessary, add a little more flour.

Shape pancakes

Form small, flat pancakes with your hands: To do this, take a chicken egg-sized amount with a tablespoon, first roll it into a ball with the palms of your hands, then flatten it slightly and shape it slightly round or oval as desired.

Fry Quarkkeulchen

Now melt 2 tbsp clarified butter (or vegetable oil) in a coated pan and fry the Quarkkeulchen for about 4 minutes on each side over medium to high heat. They should be nice and crispy. Degrease on kitchen paper if desired.

Serve

Dust with powdered sugar and serve with applesauce or Marillenröster.
