Description

This vegetarian vegetable quiche from the Thermomix® is a hearty main course with flour, onions and celery as main ingredients. The recipe is designed for 6 servings and requires a preparation time of 75 minutes, of which 30 minutes is active working time. Ideal for the whole family or as a filling meal with lots of vegetables. Prepared with the Wundermix MilkiMizer and Meistermix Patix. Category: Tart.

  • 250 g Flour
  • 0.5 TL Salt
  • 1 Prise Sugar
  • 0.5 Würfel Yeast
  • 2 EL Oil
  • 125 ml lukewarm Water
  • 1 Zwiebel Onion
  • 100 g Celery
  • 1 EL Oil
  • 1 Stange Leek
  • 150 g Peas (frozen)
  • 0.5 TL Salt
  • 1 Prise Pepper
  • 1 Prise Nutmeg
  • 3 Eier Eggs
  • 100 ml Milk
  • 100 g Cream
  • 1 TL Mustard
  • 100 g grated Cheese

Prepare yeast dough

Add flour, salt, sugar and yeast to the mixing bowl.

Add oil and water and knead into a smooth dough with the Patix dough knife for 2 min./kneading setting.

Let the yeast dough rise

Place the dough in a bowl, cover and let rise in a warm place for approx. 30 minutes until the volume has doubled.

Prepare vegetables

Peel and halve the onion. Clean and roughly chop the celery.

Chop onion and celery

Put the onion and celery in the mixing bowl and chop for 3 sec./speed 5.

Sauté vegetables

Add oil and sauté for 3 min./120°C/speed 1.

Prepare leek

Clean the leek, halve it lengthwise, wash it thoroughly and cut it into rings.

Add leek and peas

Add the leek and peas to the mixing bowl and sauté for 3 min./100°C/reverse rotation speed 1.

Seasoning

Season with salt, pepper and nutmeg.

Whisk eggs and milk

Add eggs, milk, cream and mustard to the mixing bowl.

Roll out yeast dough

Roll out the yeast dough on a floured work surface and place in a greased quiche dish (approx. 26 cm diameter). Form a rim.

Fill in vegetables

Spread the vegetables on the dough.

Pour egg-milk mixture over it

Pour the egg-milk mixture over the vegetables.

Sprinkle cheese over it

Sprinkle the grated cheese over it.

Baking

Bake the quiche in a preheated oven at 200°C (top/bottom heat) for approx. 45 minutes.
