Description

This savory asparagus quiche from the Thermomix® is a vegetarian dish with white and green asparagus, eggs and sour cream. The grated cheese provides a spicy note. Preparation takes about 80 minutes and yields 6 servings. Ideal as an appetizer or main course for a festive meal or for guests. The tart is especially enjoyable in the spring.

Ingredients (9 ingredients)

  • 1 Quiche dough
  • 250 g white asparagus
  • 250 g green asparagus
  • 3 Eggs
  • 200 g Sour cream
  • 100 g Grated cheese
  • Salt
  • Pepper
  • Nutmeg

Preparation (7 steps)

Preheat oven and prepare quiche dish

Preheat the oven to 190°C top and bottom heat. Grease a quiche dish (Ø 27 cm) with some butter and put the quiche dough into it.

Prepare asparagus

Peel the white asparagus. Cut off the woody ends of the green and white asparagus. Halve asparagus spears diagonally.

Cook asparagus

10 min/212°F/Speed 1 100

Bring a pot of water to a boil, salt it and pour into the mixing bowl. Place the white asparagus in the simmering basket and cook for 7 min./100°C/speed 1. After 7 minutes, add the green asparagus and cook for another 3 min./100°C/speed 1. The asparagus should still be al dente.

Quench asparagus

Drain the asparagus and quench with cold water to stop the cooking process.

Prepare sour cream cheese mixture

Thermomix® Setting
20 sec/Speed 3

Add 200 g sour cream, 3 eggs, 100 g grated cheese, salt, pepper and nutmeg to the mixing bowl and stir for 20 sec./speed 3.

Top quiche

Pour the sour cream cheese mixture onto the quiche dough and spread the cooked asparagus evenly over it. If desired, spread some more grated cheese on the quiche.

Bake quiche

Bake the asparagus quiche in the preheated oven for 40-50 minutes until golden brown.
